A chef's job teaches them how to work around onions tearing up their eyes. Besides, it wouldn't make a 100% impact on the TV viewing public to see some person crying while they are putting on a cooking lesson!

Lots of good answers here, but here's one that always works for me: breathe through your mouth while cutting the onion. Don't know if TV chefs use this, but I learned it years ago from one.

Put the onion in the fridge about 1 hour before needed and the cold helps keep the juices from running and that is what causes you eyes to water.

Good knives keep the onion intact, they refrigerate the onions first, also can soak them in water to knock down the scent. Here is a trick...try sucking on a peppermint candy while cutting an onion...it works for me.

I dont tear when I cut onions because I make sure I keep my head as far away as possible and when I am done I wash my hands.

quick chopping without spreading the onion all over the cutting board and having proper ventilation help. A quick rinse with cold water before you start chopping seems to help too.

If you refridgerate your onion well (Don't freeze it, you'll have a mushy onion after you thaw it) before you cut it, the juices of the onion won't disperce and sting your eyes and nose as fast as if it were at room temp.

its a combination of 2 factors. they do it quick enough so the chemicals in the onion dont reach their eyes and when it does, being around it so much, it doesnt bother them b/c they build up an immunity to it.

after you do it for so long, you get used to it, like anything else...but a trick for you at home...soak your onions in cold water for 15-20 minutes before cutting them, it really helps
