if you don't add it you will get a very flat hard "rock" that has pizza sauce on it. You need the yeast for it to rise

your dough will become biscuit. well, you'll have a thin crust pizza anyway.

to make your dough rise, you can add baking powder and an egg. Or use baking soda in place of baking powder

If you don't add yeast, you're going to get this dry, crunchy almost biscotti-like consistency with the dough. Don't skimp on yeast. It saves lives.

it'll stay flat and get crispy and might taste a little weird. try it... see what happens. Cooking is not a science, you may like what happens... if not then you'll know for next time.

What you'll end up with is a cracker like crust. If you like thin crust it'll be okay but not great.

You need it - otherwise you'll just get a weird, flat, tortilla-like thing.
