if you don't add it you will get a very flat hard "rock" that has pizza sauce on it. You need the yeast for it to rise

your dough will become biscuit. well, you'll have a thin crust pizza anyway.
to make your dough rise, you can add baking powder and an egg. Or use baking soda in place of baking powder

If you don't add yeast, you're going to get this dry, crunchy almost biscotti-like consistency with the dough. Don't skimp on yeast. It saves lives.
