Because of its very nature, shampoo is a degergent- on the chemical level it bonds to the oils in and on your hair, and bonds to the water you wash your hair in. The water carries this little water-shampoo-oil chain with it when you rinse your hair out.

If you don't use conditioner after you shampoo, it's like not puting lotion on after you shower. Your skin (hair) may be a little dried out,but if you're ok with it, then go ahead. If you're not happy with the dryness, use a light conditioner.

The same thing happens to me when I wash dishes (no, I don't have a dishwasher). The dishsoap strips the oils off my hands, and they feel like the skin is 2 sizes too small till I put some lotion on.

make sure you are not using a clairifying shampoo. clairifying shampoo removes all build-up and all natural oils which you hair needs to stay moisturized. try just using a moisturizing shampoo. if you do have a lot of build-up from hairspray, gel, etc. then you can use a clairifying shampoo no more than twice a month.

the cleansing in the shampoo strips the hair of it's natural oils..that's what makes your hair dried and frizzy over time
