Just keep in mind the fact that you are safer in the plane than driving to the airport, and as far as the water goes, it makes no difference between flying over land since crashes aren't survivable anyway. Go have fun, and don't sweat the plane.

Airplane travel is the safest form of transportation. There are very few aircraft accidents so when one happens, it makes the news. They say most airplane crashes are survivable so even if the airplane did crash, the probability of survival is high.
As for flying over water, I thought the flight path going from the U.S. to Europe is to fly towards Greenland (assuming you are flying from New York). You can try to call the airline and ask if they know the flightpath of your trip.
But in terms of getting over the fear, just look past the whole trip and look ahead at the fun you will have in seeing your exchange student and meeting her family. If you don't make the trip, you will miss out on a lot. You can see the sights and experience the culture of Spain. It is an opportunity you don't want to miss.
As for the flight, listen to the flight attendant as they go over the safety information. What I do once on an aircraft is to count the number of rows to the nearest exit as well as know of a back-up exit door. (I don't think straight during chaos so I try to plan ahead what to do should anything happen). Bringing some music should take your mind off things. Also the airline should be showing you some movies so if you watch that or sleep during the flight, it will make the time pass pretty quickly.
I hope you overcome your fear of flying and make the trip.

potatochip is right, you'll be flying mostly over land, so don't be scared about the ocean
also, it's unlikely anything happens in the flight levels, your airplane has multiple engines and is capable to fly with one missing (it is really very safe: everything has double safeties, double instruments and such)
flying is the most regulated and therefore safest mode of transportation (there are no drunk kids up there, causing accidents ;-)
and 90% of all airplane accidents (you hear about 10 per year worldwide?) happen on take-off and landing, so the only time to be nervous are the first and last 15 minutes. I'm sure, being tense for half an hour will be worth it, if you get to see Spain!
PS: airplanes do not drop out of the sky if anything goes wrong - they are built to fly and can glide for quite a long time

There is such a small percentage of airplane accidents. Less planes have accidents than cars. Are you afraid to get in your car every day? No you're not. I have been overseas 4 times. It's not that big of a deal. You'll do just fine.

I have flown in rotorcraft (Helicopters) on a weekly basis for the past three years. Due to the stress and the dynamics of rotorcraft, the probability of a crash is much more likely than that from a fixed wing aircraft. My advise to you is much like the others on this page. get over your fears and just do it. carpe denim (however its spelt) lol, seize the moment and live. take care.

Watch the movie "HOOK" in which Robin Williams says, 'when its your time it's your time' but WHAT IF IT' S THE PILOT'S TIME?
Learn to swim
Wear dull tasteless clothing (sharks are fashionistas)
Do not bleed in the water or if others already have, swim away from their bloated lifeless...... aw, that's cruel
Take a chill pill, get in the plane and go see your friend. You may die, and you may not. That is the risk you take every day getting in a CAR!!!

Take a sleeping pill to knock you out before the plane even gets off the ground. Before you know it, you'll be at your destination.
