That particular roast is made up of a cluster of muscles that would fall apart when roasted. The strings hold it together so it roasts evenly adn slices nicely. Just snip the strings off when the roast is done and has rested 15 min, before slicing.

The string is to keep the roast in shape. It can be baked with the string and then cut the string when you are going to slice and serve the roast. I haven't roasted one in ages so can't help you much there. Do a search for "rump roast recipes" on the Internet. You can get all sorts of ideas that way. Good luck! Marjorie

No!! Leave the strings until the roast is done cooking. The strings hold the roast together, and gives it its shape in the end.

I cut the strings off. It was a mess. Everything fell apart, and it didn't cook evenly. I haven't made a roast since.
