The first one I invented and it's awesome, if I do say so myself! :D


Sugar Pie's Blueberry-Stuffed French Toast Casserole

Nonstick cooking spray
9 eggs, beaten
2 cups milk
¼ cup melted butter
½ cup maple syrup
12 cups cubed stale French bread
1 (8 oz.) package cream cheese, cut into small cubes
2 cups fresh or frozen blueberries
Blueberry Syrup or maple syrup (optional)

Preheat oven to 350ºF. Grease a 3-quart rectangular baking dish with cooking spray; set aside.

In a smaller bowl combine eggs, milk, butter, and the ½ cup maple syrup. Whisk until combined. Place bread cubes in large bowl; add cream cheese and the blueberries. Slowly pour the egg mixture over blueberry-and-bread mixture; gently fold mixture to evenly moisten the bread. Pour into greased casserole dish.

Bake 40 to 45 minutes or until a knife inserted near the center comes out clean. If necessary, cover with foil the last 10 minutes of baking to prevent overbrowning. Let stand 10 minutes before serving. Cut in squares. Serve with Blueberry Syrup or additional maple syrup, if desired. Makes 12 servings.

Lemon-Blueberry Muffins

1 3/4 cups all-purpose flour
3/4 cup plus 2 tablespoons sugar
2 teaspoons baking powder
3/4 teaspoon salt
1 cup blueberries
2 large eggs
1/2 cup milk
1/4 cup vegetable oil
Finely grated zest of 1 lemon
1/4 cup fresh lemon juice

Preheat the oven to 375°. Butter a standard 12-cup muffin pan. In a medium bowl, whisk the flour with the sugar, baking powder and salt. Stir in the blueberries. In another medium bowl, whisk the eggs with the milk, oil and lemon zest, then whisk in the lemon juice. Using a rubber spatula, fold the egg mixture into the flour mixture until blended; do not overmix.

Spoon the batter into the muffin cups and bake for about 20 minutes, or until a cake tester inserted in the center of a muffin comes out clean. Let the muffins stand in the pan for 5 minutes, then carefully transfer them to a rack to cool slightly. Serve warm or at room temperature.

MAKE AHEAD Once thoroughly cooled, the muffins can be kept overnight in an airtight container.

Blueberry Coffee Cake Muffins

12 tablespoons unsalted butter -- at room temperature
1 1/2 cups sugar
3 extra large eggs -- at room temperature
1 1/2 teaspoons vanilla extract
8 oz. sour cream -- (1cup)
1/4 cup milk
2 1/2 cups all purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon kosher salt
2 half pints fresh blueberries -- pick through for stems

Preheat oven to 350ºF. Line muffin tin with liners.

Cream butter and sugar until fluffy about 5 min. Add eggs one at a time then add vanilla, sour cream and milk.

Sift together flour, baking powder, baking soda, and salt and add to butter mixture until mixed. Fold in blueberries with a spatula. Scoop with an ice-cream scoop in prepared muffin tin. Bake 25 to 30 minutes.

Blueberry Streusel Coffee Cake

2 c. flour
1 c. sugar
2 tsp. baking soda
pinch salt
1 egg, beaten
1 c. milk
1/2 c. butter, softened
1 c. fresh or frozen blueberries
1 c. chopped pecans

Streusel Topping
1/2 c. sugar
1/3 c. flour
1/4 c. cold butter

In bowl combine first four ingredients. Add egg, milk and butter. Fold in nuts and berries. Spread into buttered 9" square pan. Mix streusel ingredients together until crumbly. Sprinkle over batter. Bake 375FºF for 40 minutes.

Blueberry Dumplings

1 cup all-purpose flour
1 tablespoon sugar, plus 1 1/2 cups
pinch of salt (Sugar Pie's addition)
1 teaspoon baking powder
Pinch salt
1/2 cup (1 stick) butter, softened
1/4 cup milk
1 quart fresh or frozen blueberries
2 cups water
Vanilla ice cream or fresh cream, for serving

Stir flour, 1 tablespoon sugar, baking powder, and salt together into a medium bowl. Cut butter into dry ingredients, using a pastry cutter or fork. Add milk to form dough. Set dumpling dough aside.
In a large saucepan, combine berries, 1 1/2 cups sugar, and water and bring to a boil. Drop dumplings into hot boiling berries by the tablespoonful. Cover pot, reduce heat to low, and cook slowly for 20 to 30 minutes. Do not remove the lid before 20 minutes has passed, and do not stir dumplings. Serve warm with vanilla ice cream or fresh cream.

BLUEBERRY COFFEE CAFE

Topping:
5 Tablespoons sugar
1 teaspoon cinnamon
2 cups blueberries

Mix above ingredients together and set aside.

Cake:
3 cups flour
2 cups sugar
3 teaspoons baking powder
1 cup oil
1/4 cup orange juice
4 eggs
2 1/2 teaspoons vanilla extract

Beat all cake ingredients together until well blended.

Pour 1/2 of the batter in a greased tube pan.

Sprinkle with 1/2 of the topping mixture. Add the remaining batter. Then the rest of the topping mixture .

Bake at 350 for 1 - 1 1/4 hour.

A quick cobbler !! just put the blueberries ( about 2 cups ) in the bottom of a 13x9x2" pan, sprinkle with 1/2 C. sugar and 1/2 C. water. Take a plain yellow cake mix and put it right from the box on top of the berries, and melt one stick of better or margarine and pour this over it all, bake 1/2 hr at 350. This works really well with a large can of peaches too girls!

easy yummy dessert...


2 cups fresh blueberrys OR 1 can blueberry pie filling
1 box yellow cake mix
1 can crushed pineapple
1/2 cup melted butter

spread pie filling into bottom of baking dish
spread pineapple on top
top off with the cake mix MIXED with the melted butter

bake at 375 degrees for 20-25 minutes or until brown on top...

really good with ice cream on top...

EASY BLUEBERRY ICE CREAM

This is really easy, quick, delicious and fattening (hey it can't all be good).

4-6 servings:

3 cups frozen blueberries
1 packet full fat Philadelphia Cheese
1 cup milk
4 tablespoons honey

Blend them all together in the electric blender. Pour into a container and put in the freezer. Every hour or so for the first 4-5 hours take it out and stir to stop it freezing up in big icey chunks.

Cobbler (works with any fruit)

1 cup flour self rising
1 sup sugar
i cup milk
1 stick melted butter (margarine)
wisk together
pour in square dish

pour in 2 cups berries
pour 1/4 cup sugar on top
Bake at 350 degrees for 1 hour

BLUEBERRIES `N CREAM CHEESECAKE

2 1/2 c. fresh blueberries
1 tbsp. cornstarch
3 (8 oz.) pkg. cream cheese, softened
1 c. sugar
5 eggs
2 tbsp. cornstarch
1/4 tsp. salt
1 1/2 c. commercial sour cream
2 tbsp. sugar
1/2 tsp. vanilla extract
1/4 c. sugar
1/4 c. water
1 c. fresh blueberries

Combine 2 1/2 cups blueberries and 1 tablespoon cornstarch in container of electric blender; blend until smooth. Cook puree in saucepan over medium-high heat about 15 minutes or until slightly thickened, stirring constantly. Set mixture aside to cool. Reserve 1/2 cup puree for glaze.
Beat cream cheese with an electric mixer until light and fluffy. Gradually add 1 cup sugar, mixing well. Add eggs, one at a time, beating well after each addition. Stir in 2 tablespoons cornstarch and salt. Pour batter into a greased 9 inch springform pan. Pour puree over cheesecake batter; gently swirl with a knife. Bake at 325 degrees for 45 minutes or until set. Remove from oven; cool on wire rack 20 minutes.

Combine sour cream, 2 tablespoons sugar and vanilla; mix well. Spread over cheesecake. Bake at 325 degrees and additional 10 minutes. Cool cheesecake on wire rack. Cover and chill 8 hours.

Combine reserved 1/2 cup puree, 1/4 cup sugar and water in a small saucepan; cook over medium heat, stirring constantly, until thickened. Gently fold in 1 cup blueberries; let cool.

Remove sides of springform pan. Spoon blueberry glaze on cheesecake. Yield: one 9 inch cheesecake
