South Beach Diet has a great recipes for veggie quiches made in a muffin tin -- so you can just pop a couple out for breakfast. It has chopped onion, pepper and spinach in it and egg and cheese. Really good. It is not heavy on the egg...

If you want to lose the eggs entirely, try having a steak.
If you want to do something different with the eggs, try making a souffle. I like doing a cheese and curry souffle.

Peanut butter, but I don't know what you could put it on except starches.
Breakfast sausages are yummy but fatty.
You could always just make up a steak. How about Steak with mushrooms?

~Ham & cheese melted together in a skillet
~cheeses: cottage, sliceable ones like cheddar, MoJack, etc.
~Omelettes w/ all sorts of cheese, meat, and veggie fillings (yes, eggs again, but at least it's interesting)
