The other day I cook some mushrooms and tomatoes (without the skin) in a pan with olive oil, pepper and thyme.
Today, I put some of that mix in my sandwich, with some cheese. It was really good !

Your question is a good one, as I eat a sandwich every day, I got new ideas ! Thanks ;)

Cucumber, chicken ( but not the packet sliced cereal stuff) , tomato, shredded lettuce and mayo on brown granary bread.. Very refreshing.

Heinz maple style beans with the outsides of the bread buttered and grilled. Serioulsy, it's good!

It has to be Tuna, chopped tomato, grated cheddar & finely chopped red onion mixed together with Mayo. Delicious!

Chicken, Tuna and or Egg Salad. Also good old B-L-T's. Summer sausage, cheddar and brown mustard. I'm sure there are a million more....

Depends on your taste.
I still like BLTs (bacon, lettuce and tomato) on white toast with mayo.
And cream cheese and olive.
But my favorite is crunchy peanut butter and whatever jam you like (I love mango or strawberry)
