Canned food, like any food, can be good or bad. When compared to other methods of food preservation, there are 2 issues: contaminants and nutrition.

As for contamination, there are 2 types of problems: bacteria and residues. Canning was a major development in food preservation because it allows food to be stored for a long time without refrigeration safe from bacteria. But if the processor is not careful to keep food and cans clean, some deadly bacteria that causes botulism can get in the can. This is typically more a problem with home canners (who put their food up in jars) than with commercial canners. However, bacteria contamination is always a possibility, which is why it is very important to check the can before opening for any sign of bulging. It is also safest to discard any cans that are dented. When in doubt, throw it out, or at least cook the food so it is very, very hot for a while, to kill any possible bacteria. As for residues from the cans, quality canners use quality materials that should not leave residues in the materials. Cheap canners, especially those from developing countries without tough governmental regulations often use cheap canning materials that leave toxic residues in the food. Read the labels to see where the food in your cans was produced and canned, and before buying canned food from places like China or India, see if the can looks sturdy and stainless. If the food tastes like the can, avoid that brand in the future.

As for nutrition, canning is not a great way to preserve vitamins and minerals because the cooking process for the canning has to be thorough to kill any bacteria. You will get generally much more nutrition from fresh or frozen vegetables than from canned ones, as well as a lot less salt. Canned foods are a necessary evil--if you can't find fresh and you can't store your foods in a freezer, than buying them in a can will provide some convenience, but keep in mind that potential nutrition will be compromised.

no,not really.it's actually preserved food so long as the doesn't
get punctured.all canned foods are required to be heated at the
cannery while in the can to kill bacteria.the taste of some foods,
on the other hand,might not be so desirable.probably because
the nutrients diminish somewhat from being overcooked.

The food is just as good as any other but there tends to be a lot of salt in canned food. Look at the label. It will tell you how much salt is in the can.
