My recipe serves two or three as main course depending on appetite and size of vegetables.
1 aubergine (eggplant)
4 small courgettes (zucchini)
2 medium peppers, yellow & orange for colour
1 large mild onion
tin chopped tomatoes*
2 cloves garlic
mixed herbs
ground black pepper to taste
olive oil for cooking
1) slice and salt aubergine, leave in colander to drain
2) chop courgettes into bite sized pieces and brown in olive oil in large pan, then remove.
3) chop peppers into bite sized pieces and brown in olive oil in same large pan, then remove.
4) chop onion into bite sized pieces and soften in olive oil in same large pan, then remove.
5) rinse & squeeze moisture out of aubergine, chop into bite sized pieces and brown in olive oil in same large pan
6) peel, squash, and finely chop garlic and add to pan with aubergine. When it starts to brown add contents of can of tomatoes, stir, add rest of ingredients.
7) lower heat and simmer slowly till all ingredients are soft. Even better if kept and reheated next day.
Can be served hot or cold, on its own with chunky bread, or as an accompanient to a meat dish.
Matches with warm southern red wine, Cotes du Rhone, Syrah, or Grenache
Looks great with the mix of colours - purple (aubergine) green (courgette) orange and yellow (pepper) white (garlic) red (tomatoes)

Ratatouille
A very tasty side dish from the South of France.
Capsicums: 1 each of green, yellow, orange and red, cut into 1 in pieces
1-2 large onions, roughly chopped
4 zucchini, sliced
1eggplant (aubergine), cut into 1 in pieces
3-4 tomatoes, either fresh or good quality tinned, peeled and chopped
2-3 cloves of garlic, crushed
1 tbsp olive oil
fresh basil, 10 leaves
1 tsp, oregano, fresh or dried
salt and pepper to taste.
braise the onions in the heated oil.
add the capsicums, garlic and stir.
leave to cook for 5 minutes, than add the eggplant, zucchini, oregano and a halve of the basil.
pour the the tomatoes over it, season, stir and cover the pan leaving it to cook gently for 10-15 minutes.
add the rest of the basil and serve
delicious with grilled meats and barbeques.
Tip: if you partially cook it the day before, it will bring out the flavor more.
