I don't know about rabbit poo, but I know some places eat moose poo.
And in Sardinia, they let maggots feed on cheese and eat what they pass out (a supposed delicacy).

though i highly doubt it will hurt them you do have to remember that poo is excreted "waste" product...this is whats left of what the rabbit ate that itsbody considers waste & needs to be exited from the body
