Pork used to have to be cooked well done due to "trichinosis". Trichinosis has been absent from inspected pork for many years now and you may actually cook your pork as you would a steak. However, for most people anything under medium (145-150 degrees) is just not palatable to the psyche. Most people enjoy it medium well (155-160) as it is very light pink and yet still quite juicy.

My book says you should have an internal temperature of 170 degrees farenheit. (pork should be well done) Hope that helped.

but if you don't want to risk it drying out cook it to 135-137 and let rest (covered loosely) for 15 minutes it will continue cooking (this is called carry over cooking)

Get a meat thermometer and it has all the meats temperatures on it .
