Definitely taste. Hearing would be the last thing I gave up, because I love music too much. I use sight all the time, obviously, so I wouldn't want to give that up. Smell can come in handy, like if something's on fire you'll smell smoke or whatever, plus smells are good. Feeling would suck, cause you'd hurt yourself all the time and not know it.

Wow...that's a tough one...I would have to say smell. It seems like it would be the least invasive sense to loose. I would sure miss the ability to smell that coffee brewing, or that great apple pie just out of the oven, or a baby's new smell...but I'd rather lose that than the sense of taste...I don't know if I would want to go the rest of my life not tasting anything I ate. A person has to eat....

I can honestly answer this question from past experience. I would give up sight without thinking. When you can not see, all of your other senses come to life and you can experience life more. Seeing isn't necessary, especially when all of the other senses come in to take over.

Senses are:
Sight...not!
Hearing...not!
Touch...maybe...
Taste...maybe...
Smell...maybe...
Taste and smell are kind of intertwined I think. If you lose your sense of smell, you would lose your sense of taste.
If I lost my sense of touch, I might also lose my sense of pain and that could be bad. But if you were a fighter, no pain would be rather handy.

i would give up smell, because the other 4 are too important to me:
my eyes are precious to me, as I am an artist of a sort
I am a total music junkie, so I definitely need my ears
touch , well, we all know what touch is needed for
taste -I like my food tasty

Possibly sight. I know it sounds crazy, but I always wondered what it would be like to fall in-love with your soul instead of your eyes leading the way. If the whole world was blind, we would get rid of so many problems.

I'd loose the hearing. No more listening to the crap that some people talk. Damn.. No more music. Hmmm. Still feel it though I guess. Invest in a monster subwoofer and move out to the bush.. ;)
