I think there is more variety in Chinese foods as there are more regional style types (Cantonese, Szechuan/Sichuan, Mandarin, Hunan, Shanghai, etc...). Japanese food is a little more limited in scope because they are an island, and thus their accessibility to different foods are much more limited.
