Grilled Salmon with Cilantro Sauce

Grilled salmon topped with cilantro, jalapeno, and butter.
Original recipe yield: 8 servings.


INGREDIENTS:

* 3 pounds salmon
* 1/4 cup butter
* 1 cup chopped cilantro
* 1 fresh jalapeno pepper, seeded and chopped
* Old Bay Seasoning TM to taste

DIRECTIONS:

1. Preheat grill for high heat.

2. Lightly grease one side of a large sheet of aluminum foil. Place salmon on the greased side of foil. Melt the butter in a saucepan over medium heat. Remove from heat, and mix in cilantro and jalapeno. When cilantro is wilted, drizzle butter mixture over the salmon.

3. Place foil with salmon on the grill. Season with Old Bay. Cook 15 minutes, or until fish is easily flaked with a fork.

Rhubarb Cheesecake Pie

This recipe combines the best of a pie and a cheesecake. Nice and tangy. Garnish with whipped topping and almonds if desired.
Original recipe yield: 1 - 9 inch deep dish pie


INGREDIENTS:

* 1/4 cup cornstarch
* 1 cup white sugar
* 1 pinch salt
* 1/2 cup water
* 3 cups chopped rhubarb
* 1 (9 inch) prebaked deep dish pie shell
* 1 (8 ounce) package cream cheese
* 2 eggs
* 1/2 cup white sugar

DIRECTIONS:

1. Preheat oven to 425 degrees F (220 degrees C.)

2. In a saucepan, combine cornstarch, 1 cup sugar, salt, water and rhubarb. Cook, stirring occasionally, until thickened. Pour into pie shell.

3. Bake in the preheated oven for 10 minutes. Remove from oven and reduce temperature to 325 degrees F (165 degrees C.)

4. In a medium bowl, beat cream cheese, eggs and 1/2 cup sugar until smooth. Pour over rhubarb in the pan.

5. Bake in the preheated oven for 35 minutes, or until filling is set.

YANKEE POT ROAST, COLE SLAW AND JELLO:

Pot roast using the slow cooker
2 lb chuck roast
1 pkg lipton onion soup mix, dry
1 can cream mushroom soup, campbells
1 celery stalk, diced
1 onion, diced
2 whole carrots, peeled and cut
4 potatoes, peeled and cut in 1/4
1 crushed garlic clove
3 tbsp flour
1 Reynold's slow cooker liner, optional

The slow cooker liner makes cleaning up a snap!
In the crock pot, add the can of cream mushroom soup, a can of water, the lipton dry soup, flour and mix the ingredients well.

Add the roast and the garlic. Mix around til covered with soup mix. Add the onions and veggies. Add water to barely cover the veggies (remember the water level may go up during cooking!).

Cover and turn crock pot to med/low. Cook 6-8 hours and it will be so tender! Serves 3-4


MEXICAN COLE SLAW
1 avocado, ripe, peeled and diced
1/2 bunch cilantro, finely diced
1 large tomato diced
1/2 cabbage, sliced and diced
1/4 c diced celery
1/2 brown onion, diced
1 fresh jalapeno, seeds removed then diced
Mayo
salt/pepper to taste

In a large bowl - Add the cabbage, then the cilantro, tomato, celery / onion, jalapeno and a dash of salt/pepper.
Add the avocado then 2 -3 tbsp of mayo or just enough to moisten to your taste. Mix well. Chill for 1 hour and serve cold

JELLO DESSERT
1 pkg large jello, any flavor
coolwhip
fresh fruit

Make the jello as on the package but use 1/2 cup less water.
Add fresh fruit like fresh strawberries, grapes, chopped apples. Let it gel for 4-6 hours. Mix up the jello and add 1/4 tub of cool whip. Add more if desired. Mix well, and its like an ambrosia.

Put the mix in a glass, and top with more fresh fruit or coolwhip.
Serves 4


For drink: I get cranberry juice and add some sprite/ 7-up to it.

Breakfast I just grab some coffee and donuts. Sorry

Here is a great old brownie recipe. It takes a little time, but is well worth it. I get raves whenever I make them. The cooked fudge icing is the best. I don't use nuts, but it's a personal preference.

Chocolate Brownies

1 cup and 2 Tblspnbutter
6 squares unsweetened chocolate (2 ½ minutes in microwave)
2-¼ cups sugar
5 eggs
2 tspns vanilla
1 ¾ cups sifted flour
1 tspn salt
1 cup coarsely chopped nuts (optional)

Melt butter and chocolate together
Add sugar, eggs and vanilla. Beat until well blended
Sift flour and salt together, mix with nuts; add last.
Put into greased pan. Bake 25 minutes at 350º or until toothpick is cleanish.

Quick Fudge Icing

1-cup sugar
¼ cup cocoa
¼ cup butter (melted)
½ cup milk
2 Tblspn white corn syrup
1/8 tspn salt
1 ½ to 2 cups sifted confectioners’ sugar
1 tspn vanilla

Mix sugar and cocoa in saucepan. Stir in butter, milk, corn syrup
and salt. Bring to full rolling boil. Boil vigorously for 3 minutes,
stirring occasionally. Cool for about 10 minutes.
Beat in confectioners sugar and vanilla.

My husband really likes this:

You can use any cut of chicken you prefer but we usually use boneless breasts or tenderloins.

Take some Stove Top stuffing mix and crush it until fine. Mix it with grated parmesan cheese. Coat the chicken with this mixture. Place in baking dish that has been coated with no stick spray. Drizzle with butter if desired. Bake in 350 degree oven until juices run clear. About 20-30 minutes for tenderloins 30-40 minutes for whole boneless breast pieces. I have been experimenting with dipping in milk or beaten eggs to get a thicker coating to stay on the chicken, but it's good regardless.

A quick & healthy fresh fruit snack, dessert or for breakfast:

Fresh Fruit Salad

Cantalope, cut into bite size
Blueberries
Walnuts, chopped
Yogurt, mayonaise or whipped cream

Place fruit in small individual bowls & mix
Sprinkle walnuts on top of the fruit
Add a dollup of yogurt, mayo or whipped cream on top

Here's one for American lasagna. I tried it and loved it:

1 1/2 pounds lean ground beef (I prefer sausage)
1 onion, chopped
2 cloves garlic, minced
1 tablespoon chopped fresh basil
1 teaspoon dried oregano
2 tablespoons brown sugar
1 1/2 teaspoons salt
1 (29 ounce) can diced tomatoes
2 (6 ounce) cans tomato paste
12 dry lasagna noodles
2 eggs, beaten
1 pint part-skim ricotta cheese
1/2 cup grated Parmesan cheese
2 tablespoons dried parsley
1 teaspoon salt
1 pound mozzarella cheese, shredded
2 tablespoons grated Parmesan cheese

1. In a skillet over medium heat, brown ground beef, onion and garlic; drain fat. Mix in basil, oregano, brown sugar, 1 1/2 teaspoons salt, diced tomatoes and tomato paste. Simmer for 30 to 45 minutes, stirring occasionally.
2. Preheat oven to 375 degrees F (190 degrees C). Bring a large pot of lightly salted water to a boil. Add lasagna noodles, and cook for 5 to 8 minutes, or until al dente; drain. Lay noodles flat on towels, and blot dry.
3. In a medium bowl, mix together eggs, ricotta, Parmesan cheese, parsley and 1 teaspoon salt.
4. Layer 1/3 of the lasagna noodles in the bottom of a 9x13 inch baking dish. Cover noodles with 1/2 ricotta mixture, 1/2 of the mozzarella cheese and 1/3 of the sauce. Repeat. Top with remaining noodles and sauce. Sprinkle additional Parmesan cheese over the top.
5. Bake in the preheated oven 30 minutes. Let stand 10 minutes before serving.

corny chicken breast ---- chicken breast boneless - corn flakes- seasoning like lemon pepper- a little milk(any kind) a teaspoon of butter or margarine. Dip chicken breast in milk - seasoning -dip in crushed corn flakes- add the butter to a aluminum foil lined pan- turn on the oven 350. melt butter in pan- add chicken and bake til done about 45 minutes also u can do more than one breast depending on how many ur feeding really good and easy clean up
