Hey there. This lady at my office makes one with a cake mix and instead of any of the other ingredients, she uses one cup of diet 7-up or Sprite. She makes strawberry cupcakes and they taste great. But I don't know about how much sugar is in the cake mix alone. But I hope you try it and like it.

Sugarless Cake
1 cup Raisins
2 cup Water
1 Egg, beaten
1/2 cup Shortening
1 cup Rolled oats
1 1/2 tsp Vanilla
1 1/2 tsp Equal or sweet and low
1 cup Flour
1/2 tsp Salt
1 tsp Baking soda
1 tsp Cinnamon


Combine raisins and water & cinnamon in saucepan under low heat for 15
mins. Let cool. Add beaten egg & shortening, oats, sweetener &
vanilla. Sift flour, salt, soda & cinnamon. Mix all together well.
Pour into a greased 1 layer cake pan & bake at 350 degrees F. for
30-35 minutes

the ladyinred answer is right on. Splenda can be used in about any receipe to replace required sugar and in the same amount.
Might be good to try the receipe given on this answer page too.

NOT THAT I'M AWARE OF. HOWEVER YOU CAN USE SPLENDA IN PLACE OF SUGAR. IT IS A WONDERFUL SUBSTITUTE. TASTES JUST LIKE THE REAL THING. HOPE THIS HELPS.
