You cream of chicken soup will be excellent as a substitute. As for the sour cream, we sometimes simply omit it from recipes and add a touch (1/4 milk) and a touch (1/2 teaspoon of garlic powder).

Cream of chicken will work great, I use it in a recipe along with cream of mushroom. Cream of celery also works for those types of recipes

Cream of celery or cream of chicken will work anywhere cream of mushroom will. Or mix chicken broth and sour cream to the same consistency.

You can always use another soup, like cream of chicken or something. You can also mix corn starch, mushroom, and milk. It's almost the same thing.

what about cream of brocolli or asparagus....those are really good...chicken and beef I am not sure how they will go....
You could also probably use a little bit of whole milk or sour cream...just some ideas...

Have you considered Milk? If you're cautious of the fat content, skim milk or low fat works just as well. Remember now that what you need is a sort of thickening agent. Try not to use igredients like egg or corn starch solution as it might affect the outcome or even alter the taste of the finish product.

Do you have any other cream soups? If so, use one of those instead.
Do you have any sour cream? That would probably work.

try making a roux.... 2 tablespoons of flour, 2 tablespoons of butter in your frying pan... 2 cups of water or chicken stock
melt the butter, add the flour, and stir until flour is brown, then add water, reduce heat and stir, stir, stir....
add seasonings....
