They're boiling too hard and too fast if that's happening.
Bring the water to a boil with 1 big splash of white vinegar in it. Add the eggs, cover and turn the heat to low. Simmer for 20 mins, then run under cold water for 2 mins. Let cool in the fridge for 1/2 hour, then take them out and roll each egg on the counter to crack the shell evenly. Peel under cold running water. Perfect hardboiled eggs every time

I learned this trick after losing probably hundreds of boiled eggs. Cover the eggs with cold water, bring to a rolling boil. Put a lid on the pot, turn off the burner and wait 20 minutes (15 for small or medium size eggs). Immediately run cold water on them and let them sit in the cold water until the eggs are cool. This works 99% of the time.

the key here is fresh eggs! after an egg turns 5 days old (from laying) certain enzymes begin to form creating a bond between the egg sack and the shell. but also, start the eggs in cold water, bring it to a boil, once it begins to boil, turn off the heat, cover the pot and let sit for 15 minutes. Then dump the hot water and cool them in Ice water for at least 10 minutes, if the ice melts away,,, add more to keep the water as cool as possible.

Perfect Hard Boiled Eggs (Technique)
No fail! Never undercook or overcook your eggs again. I came across this method in my search to avoid the ugly green cast that yolks take on when overcooked. Add on a couple minutes to soak time if you use Jumbo eggs.
12 large eggs
1 pinch salt
12 eggs
1. Put eggs in large pot.
2. Cover with water so that there is at least an inch of water above the eggs.
3. Add a pinch of salt.
4. Turn on heat (med high) and heat, uncovered, to a boil.
5. If you have more than a single layer of eggs, you may want to stir them occasionally (gently!) while they heat.
6. Once the water comes to a boil, watch your clock and let it boil for 2 minutes.
7. Remove pot from the heat and cover with lid.
8. Let sit, covered, for 11 minutes.
9. Drain and cool eggs for 2 minutes in ice water.

Boil them about two minutes longer then normal, and trie removing the shell while the eggs are still warm,do this in water or make sure that the egg is wet. I like to bang on the whole egg with a spoon to get it started so I don't miss. Deviled eggs are my specialty so I know.

Put the eggs in the water before you turn the temperature on. (If the eggs are room temperature, it's even better.) Then let them come to a boil. Turn the temperature off but put a lid on the pan and let sit about 10 minutes. Drain the hot water and pour cold water on the eggs.
