I have eaten Kangaroo meat a few times. The first time was at a restaurant and it was served very rare- I assumed that was the way it was normally served, I thought it was very game and did not enjoy it that much, the next time I tried I asked to have it medium to well and it was still game but quite nice.
The traditional way is on an open fire and you will fine it well done on the out side to rare towards the middle suiting all tastes.
Don't be afraid to try it different ways as it is a nice meat.Just hop in and try.

kangaroo meat is much better rare on the body of a kangaroo, arent there enuff meat products without rresorting to eating kangaroos .....grosssssss

I loved it - just like nice rare beef - but tastier.
Guess it depends on the age of the Kangaroo whether itis tastier or not!

Better not serve it too rare in case is jumps off the plate.

You do realize that Wallabye is a marsupial, which is about 1 notch above a rat.
