I have a recipe that calls for Bleu cheese, but my mother doesn't like Bleu cheese. Do you know another cheese that would have the same impact? What I'm making is burgers. It has all these spices and onions in the meat, then you wrap it around the cheese and then grill it. The you top it with portabella mushrooms and roasted red peppers. So, what other cheese would go?

Anything reasonably soft -- the appeal of the bleu cheese is that it oozes a little. Pepper-jack is one I have used, but plain monterrey jack is good; ditto for mozzarella which sounds like it would be great with the portabella and red pepper. I'd stay away from goat cheese if she doesn't like the bleu -- it's texture and sharpness would likely be an equal turn-off.

A different cheese will have a differnt taste but at that point because the overall flavor is coming from the cheese you will not have the same thing. So at that point, I would say what type of cheese does your Mother like and use that cheese. Almost any cheese will work with a burger, onions and mushrooms. Try an aged cheddar maybe.

I think that any other good very sharp cheese would accent any burger especially the spices and onion so maybe a swiss or ghouda cheese!!!

Bleu cheese is unique in its taste. But maybe ricotta cheese?

Put in what ever your mom would like. Feta Cheese is a good choice, but again, it has to be something your mom would like.

Feta cheese is very good..also fresh mozarella(not the block kind,get the fresh white mozarella in brine)

You could do just about any type that will melt. Jalapeno pepper, pepper jack, swiss, cheddar, american, mozzarella. They all sound good to me.

Feta, probably would go great with that recipe.
Or any other "crumbly" cheese.

Mozzerella or swiss sounds yummy on there. Try one of them!
