I have some ground beef. Any ideas on something simple yet yummy. No burgers or meatloaf. Ate spaghetti a couple of days ago.

Best think of right now is, "ground beef tacos" Mexican style you'll need. Ground beef chopped onions garlic powder salt pepper cooking oil fresh cilantro (chopped) green tomatoes ( for the salsa ) garlic cloves (2) limes avocado Prep: put just an small amount of oil in a pan, when hot add the ground beef and cook it, add salt and pepper as nesesary (taste it regularly) add enough garlic powder too. When the beef is almost ready add 1 1/2 onions finely chopped ( this is for a 2 or 3 pounds of meat) or onions as desired. Cook the mixture until the onions are nicely cooked. ( don't forget tasting the mixture constantly). When it's ready it should look kinda dry, not watery at all. By this time you should have more onions, (chopped) as well as cilantro , cut some lemons for the tacos. Salsa: boil 5-6 green tomatoes, """ you also will need some "serrano green chilies" ** boil them with the tomatoes 3-4 ( depending how spicy you like salsa) when ready, get a blender and blend them with a nice touch of salt, 2-3 garlic cloves, some cilantro, and half avocado. " add a small splash of water to the blender if necesary! Salsa is ready! Warn up some Mexican style corn tortillas and you'll be done! I love this taco recipe , you should try it!

Make "empty the fridge" soup. Cook up whatever veggies you (and the kids, if you have any) like, add a can of crushed tomatoes and a bit of water with a beef stock cube, a can of beans and a cup of dry pasta or rice, along with your browned and drained ground beef. Cook until everything is done and season.

Make sort of a stir fry with ground beef, rice, and veggies. Yum.

Or how about Shepard's Pie? Double Yum.

Brown the ground beef and add taco seasoning packet from Schilling then buy some corn tortillas and have tacos! Or boil up some potatoes then before they go mushy cut them up and add them to the ground beef plus some chopped up tomato and onion and get flour tortillas, wrap the ground beef/potato mixture and make a burrito, then put some oil over medium heat and put tooth picks to keep the burritos closed and fry them and you have Chimichangas! With a little pace picante sauce on top or whatever toppings you like , like sour cream, guacamole, or all three.

Take a little olive oil, put some minced garlic and onions and sautee til the garlic and onion begin to brown, mix in a can of diced tomatoes and just a of tomato sauce, put in the ground beef and let it brown. Make some white rice and serve. You can add any other veggie (corn, green beans, etc.) and serve with a salad......my recipe for 'picadillo'.....a Cuban dish. There are several different ways of doing it but it is tasty!
