One word: sugar.
Have you ever tasted baking chocolate? Unsweetened right? Yeah tastes like a monkey's butthole (don't take that literally). It's the sugar added that makes it sooooo good.

Because it contains theobromine, a methylxanthine that makes you feel good. If you look at its structure at the link below, you will notice it is almost startlingly similar to caffeine and to cocaine(!), though theobromine is not (technically!) as addictive as caffeine or as bad for your heart as cocaine.
I'm going to find some chocolate downstairs now...
