Dripping is the answer sir.
It cooks at a much higher temperature, giving a crispier and tastier chip.
Pre heat the dripping in a chip pan, not a deep fat fryer, and test by putting in a single chip. It should bubble and start to cook immediatly. Add the rest of your chips. Do not overfill or this will cool the dripping. Cook until chips are golden. Remove chips from chip pan, drain and serve imediatly.

...it aint just the taste...
...it's not as big a pain in the ashfelt tas it is to clean out lard.

try canola oil... it's not as high in saturated fat, and is a good source of omega 3 fatty acid, which is good for the brain! And makes tasty chips!

sunflower oil is the best and good chips come from ripe green going off potatoes, less starch.
