Fresh Peach Cobbler

Ingredients

(6 servings)

1/2 c Sugar
1 tb Cornstarch
1/4 ts Ground nutmeg
4 c Peeled fresh or canned
Peaches, drained
1 ts Lemon juice
1 c Flour
1 tb Sugar
1 1/2 ts Baking powder
1/2 ts Salt
3 tb Shortening
1/2 c Milk


Instructions

1. Heat oven to 400F. Mix 1/2 cup sugar, cornstarch and nutmeg in a 2 qt. saucepan. Stir in peaches and lemon juice. Cook over medium heat until mixture thickens and boils. Boil and stir 1 minute.
2. Pour into ungreased 2 quart casserole dish. Stir together the flour, baking powder, 1 T sugar and salt. Add the shortening and cut through with a fork until flour clings to shortening. Add milk. Form into a ball. Drop mixture by 6-8 teaspoonsful onto hot fruit.
3. Bake for 25-30 minutes, or until topping is golden brown. Serve with whipped cream or vanilla ice cream.
NOTE: You may substitute any fruit for the peaches, just being care- ful that the amounts are approximately the same.

My Mom use to make an easy peach cobbler, my Dad's favorite.

One Cup Peach Cobbler

add - 1 cup each of flour,sugar and milk
1 stick of butter
1 can of peach slices

Preheat oven -- 350

Mix all the ingredients in a 3 quart oven safe bowl. bake for 45 minutes, and enjoy a very easy, but very hot Cobbler

1 stick butter
1 1/2 cup sugar
1 cup flour
1 1/2 tsp baking powder
3/4 cup milk
1 can (30oz) sliced peaches in corn syrup
1 tbs cinnamon

Preheat oven to 350F. Melt butter in 9x13 casserole dish. Separate half cup sugar and all cinnamon; and separate out the peaches from the corn syrup.

Mix 1 cup sugar and the other dry ingredients together in a bowl.

Stir in milk and corn syrup from peaches. Put peaches in casserole dish with melted butter. Pour batter over the top of the peaches. Mix cinnamon and 1/2 cup sugar; sprinkle over top of mixture.

Bake at 350 45 min for 1hr or until top crust is golden brown.

This is a very easy one and turns out great. You can use just about any type of fruit you have. Fresh is better, but I used canned peaches a few days ago and it turned out good. Just be sure to drain them completely.

Busy Day Cobbler

1/2 cup sugar
1/2 cup flour
3/4 teaspoon baking powder
1/8 teaspoon salt
1/3 cup milk
1/4 cup butter
2 cups fruit drained (or raw fruit or berries can be used)

Melt butter in small baking dish. Pour batter over butter. DO NOT STIR. Spoon fruit over batter. DO NOT STIR. Sprinkle 1 tablespoon sugar on top. DO NOT STIR. Bake at 350 degrees until crust rises to top and is brown.
