Make sure that you have plenty of fat be it oil or bacon drippings or whatever. You should always have onion and egg in your fried rice and a little soy sauce. The most important thing to remember is that fried rice is for leftovers. Be Creative. You can add anything to rice and fry it and get a tasty dish. One of my favorites involves minced left over hot dogs and fresh garlic. Also if you use day old rice, adding a little liquid at the very end and then letting it steam off will ensure that the rice isn't hard.

I have been trying in vain to create fried rice at home comparable to a good chinese restaurant...and here's what I've learned:

it is basically impossible. One thing is that the more seasoned a wok, the better tasting the fried rice. the home cook can't compete with a restaurant wok making countless batches...seasoning the cookware so well.

one thing to try: use old rice (day old or so) that has been refrigerated. the rice will stay separate that way (not gum up). Be sure to use good soy sauce. use eggs. I like to add onions. I use soy sauce on the vegetables, set them asside, then I fry the rice with some soy sauce added, then I put them all back together with yet another little bit of soy sauce for fun.

Traditional Mandarin Fried Rice

I’m passionate about fried rice: it’s the first real dish I ever made. This traditional version contains Chinese sausage, ginger, garlic, and softly cooked egg. Peas don’t belong in this authentic recipe, though their use has become almost automatic even among Chinese. Use day-old or leftover rice for this, as freshly made rice gets mushy when it’s stir-fried. If you must use fresh-made rice, “dry” it by spreading it on a baking sheet and putting it in the freezer until cool, 30 minutes.


Ingredients:

4 tablespoons canola oil
3 eggs, beaten lightly
2 tablespoons finely chopped garlic
2 tablespoons finely chopped fresh ginger
1 la chang (Chinese sausage), cut into 1/8-inch dice, or 4 strips cooked bacon, crumbled
1 bunch scallions, white and green parts chopped and reserved separately
5 cups cold cooked rice
2 tablespoons soy sauce
1/2 teaspoon white pepper
Salt, if needed
Directions

1. Heat a wok or large nonstick skillet over high heat. Add 2 tablespoons of the oil and swirl to coat the pan. When the oil shimmers, add the eggs, which will puff up. Allow to set about 5 seconds, and using a wok spatula or similar tool, push the sides of the egg mass toward the center to allow uncooked egg to reach the pan and solidify. Flip the mass, allow it to set, about 5 seconds, and slide it onto a dish; do not over cook. With the edge of the spatula, break the eggs into small pieces. Set aside.

2. Add the remaining 2 tablespoons of the oil to the wok and swirl to coat the pan. When the oil shimmers, add the garlic and ginger and stir-fry until soft, about 2 minutes. Add the la chang, the white parts of the scallions, and the rice and toss thoroughly until heated through. Add the soy sauce, pepper, and reserved eggs and toss. Correct the seasoning, adding the salt if necessary, transfer to a platter, and garnish with the scallion greens. Serve immediately.

Ming's Tip: The eggs will be done very quickly. Keep an eye on them to make sure they don't brown or dry out

Here's a recipe for Egg Fried Rice:

1 cup water
1/2 teas salt
2 tbs soy sauce
1 cup uncooked rice
1 teas vegetable oil
1/2 cup finely chopped onion
1/2 cup green beans
1 lightly beaten egg
1/4 teas pepper

Bring water, salt, and soy to a boil. Add rice. Let cook for about 5 minutes or until most of water is absorbed. Remove from heat and cover. Stir occasionally until all water is absorbed and rice is slightly sticky. Heat oil in skillet over medium heat. Saute onions and green beans for 2-3 minutes. Pour in egg and fry for 2 minutes. Scramble egg while cooking. Stir in rice, mix well and season with pepper.

Use day old rice, or cook your rice then put in the freezer for a couple of hours to dry it out. This will keep it from getting sticky.
Heat oil in a skillet, add some chopped green onions, a little garlic, and a beaten egg or two. Stirfry quickly, then add rice and stirfry til hot and kinda browned. Add a litle soy sauce to season it all.

Used day-old, cold, already cooked rice. Put some butter, veg oil, and soy sauce in a skillet with your choice of vegies. Cook them up until the butter is all melted. Toss in the rice, turn it until it's evenly covered to a light brown color. Then make a "volcano" shape out of it and crack a raw egg into the middle of it. Let the egg cook for like 20 seconds, just enough to make a thin white coating on the bottom of cooked egg. Then scramble it and cook it into the rice. Mix it up really well to avoid any large clumps of egg and to make sure all the egg cooks! This is delicious! I usually just eat it alone, without the rest of the meal! haha!

here is a recipe for almond fried rice:

ngredients:
2 tablespoons vegetable oil
3/4 cup thinly sliced green onions and tops
1/2 cup diced red bell pepper
1 egg, beaten
3 cups cold cooked rice
1/2 cup diced cooked ham
2 tablespoons Kikkoman Soy Sauce
1/2 cup slivered blanched almonds, toasted


Directions:

Heat oil in hot wok or large skillet over medium-high heat. Add green onions and bell pepper; stir-fry 1 minute. Add egg and scramble. Stir in rice and cook until heated through, gently separating grains. Add ham and soy sauce; cook and stir until mixture is well blended. Just before serving, stir in almonds.

I would have to suggest that you get a frying pan and add a lil' olive oil chop up a garlic clove and then add desired meat(chicken,shrimp,etc)Once the meat is cooked add 1egg,then add your desired vegetables and last but not least your rice.For seasoning, i would suggest salt,pepper,kikoman soy sauce, Or if you go to your nearest grocery store there is mini packets of kikoman fried rice mix. well good luck=)

Steam the rice a bit before frying it. That's what my mom does. As for flavoring and ingredients I have no clue lol.
