RECIPE INGREDIENTS
2 tablespoons vegetable oil
2 eggs, beaten
3 cups cooked rice
1/2 cup chopped celery
1/2 diced red bell pepper
1/2 cup chopped onion
1/2 cup diced carrot
1 teaspoon sesame oil
1 tablespoon soy sauce
RECIPE METHOD
Preheat a wok or large skillet over highest heat until very hot. Add the vegetable oil, tilt the wok or pan to coat, then quickly add the eggs and stir, scrambling the eggs.
Add the cooked rice, stir quickly. Add the vegetables and salt to taste. Stir and toss to blend quickly. Add the sesame oil and soy sauce, toss to combine flavors, for about 2 minutes.

2 cups Rice

100 gms Beans Finely Chopped
2 Carrot Finely Chopped
1 Onion Sliced
100 gms Cabbage Finely Chopped
2 Spring Onions Finely Chopped
2-3 Green Chilies cut lenghtwise
1 tsp Ginger Chopped Finely
1 tsp Garlic Finely Chopped
2 tbsp Soya Sauce
Salt & pepper to taste
. Pick, wash and soak the rice in enough water for 10-15 minutes and drain.
Boil water, add rice and little salt.
Cook uncovered on low heat till rice is tender.
Take care not to overcook the rice.
When rice is done, drain and add some cold water and drain again using a large seive and set aside.
Leave the rice for drying on a newspaper for atleast 10-15 mins.Each grain of rice should be separate.
Heat oil in a wok and stir fry all the chopped vegetables.
Cook for 3-4 minutes.
Take care that vegetables are not overdone, they should be crisp.
Mix salt and pepper to taste.
Add the cooked rice and mix well. Now mix the soya sauce to it.
Cook the chinese fried rice for 2-3 minutes and serve hot.

It is really not hard to make at all. The key to good fried rice is using cold rice - if you use hot rice you just cooked, it will get mushy and stick together.
So...
1. Make a batch of rice the day before (1C rice, 2 C water - bring to a boil, reduce to low and cook for 20 minutes.) Refrigerate.
2. Dice and saute your vegetables such as carrots, peas, chopped water chestnuts, snow peas, mini-corn, etc. Just saute them in a little oil with onion and garlic until they are just starting to get soft - but still have some crisp to them.
3. Once the vegetables are done, add the rice and turn up the heat to about medium-high. Stir the vegetables into the rice and begin poring in small amounts of soy sauce (use the low sodium kind if you don't like it too salty.) Keep stirring and drizzling the soy sauce over until all of the rice is heated and not clumpy and no longer white. This only takes a few minutes.
4. Scramble an egg or two and fry with out stirring. When done, cut into strips and add to the rice/vegetables - optional, of course.
This is also easy to make with left over beef or pork. Just cut the meat into small cubes and marinate it for 20 minutes in some of the soy sauce then saute it with the vegetables.

Vegetable Fried Rice Yield: 6 Servings
Ingredients
1/4 c light soy sauce
3 tb rice wine or; or dry sherry
1/2 ts salt
6 tb peanut oil
2 eggs; lightly beaten
1 carrot; in 1/2 cubes
1 red bell pepper; in 1/2
-cubes
1/2 c frozen peas
4 c cold cooked rice
Instructions
Combine the ingredients for the sauce in a small bowl. Mix to blend well
and set aside.
Place a small skillet over medium heat. When it begins to smoke, add 2
tablespoons of peanut oil and the lightly beaten eggs. Stir until the eggs
are firm but moist. Transfer the eggs from the skillet to a small bowl and
break them into small curds. Set aside.
Bring 1 quart of water to a boil in a small saucepan. Add the carrot and
boil 1 minute. Drain and rinse in cold water. Drain again and reserve.
Place a wok over medium-high heat. When it begins to smoke, add the
remaining 1/4 cup of peanut oil and the garlic. Stir briefly. Add the
carrots, celery, red pepper, and peas. Stir-fry 1 minute. Stir in the rice
and stir-fry 1 minute. Pour in the sauce and cook until the rice is heated
through, about 5 minutes, stirring frequently. Serve hot.

Get a wok, get it nice and hot, add some oil to coat the bottom, couple cloves of minced garlic, a pat of butter, and couple splashes of soy sauce. Saute veggies like shredded carrots, diced onions, peppers, mushrooms, or whatever else you may like (snow peas, waterchestnuts, regular peas, broccoli, or other veggies you like) until tender. Add a couple of eggs and chop and scramble into the mixture. Add cooked white rice and stir fry everything together. Add more soy sauce, salt, pepper, garlic and onion powder to desired taste. Keep experimenting until you find just the right blend for you and your son. Sorry I don't have a formal recipe. I just don't cook that way. I just try to taste as I go until it's right.

Chinese fried is easy...only chopping vegs is the diffcult part.
Boil the rice and strain. SPREAD it on flat platter this is imp else they will sticky.
Chop Once cup each of beans, carrots, capsicum, mushrooms and spring onions. thinly resembling grains. Shred cabbage and keep thawed cup of green peas
Boil chicken with just enuf water to cook shred and keep aside.
Start frying vegs in lil butter/oil for 2 mins only. Do not add salt. Put all the vegs fried in one pot.
Fry chicken and add to the veg mix. If required add One cup fried shrimps (i love them) and you can mix chicken & shrimps there is no harm.
Take care of cabbage and spring onions cos they release water so dry fast and then add oil else they will be soggy not crispy.
Now mix all the ingredients into rice, all should be mixed properly.
When you are ready to serve......this is really tricky. On high heat pour the rice mix now add Soy sauce 1 tbsp of 1 cup of mix , freshly ground black pepper. Avoid white pepper. pinch of Monosodium IF required salt.
This is all time fav. u have to master the art of frying thats all. Optional is chopped eggs.
Prepare beaten eggs mix with lil salt,pepper and add to pan just like pancake. Slide it on chopping board make strips then chop.
Funny thing about fried rice origin its not chinese. many of my chinese friends are not even aware of this delicacy....So whose delicacy is it anyway? lol
