My Grandfathers recipe...TRIPLE THREAT CHILI!!!
1 lb. ground beef
1 lb. " " pork
1 lb. " " venison
2- lg. cans light kidney beans
2- lg. cans red kidney beans
2- 15 oz. cans whole peeled tomatoes
1 lg diced white onion
1 red bell pepper, diced
1 green or yellow bell pepper, diced
1 tbsp. cumin
1 tsp. sage
11/2 tsp. salt
11/2 tsp. fresh ground black pepper
1 bay leaf
2 jalapenos, diced fine
1 habanero, WHOLE
Sweat bell peppers, onion, and jalapenos in small amt Olive oil. Brown meats and drain grease. Cut up tomatoes( or squish in hand) ,drain canned beans, and combine all ingredients. Add about 5-6 tbsp. red chili powder. Simmer for two hours.
REMOVE habanero pepper, serve with grated Jack cheese and crusty bread.

First of all, I don't like spaghetti or noodles in my chili, which makes me like the only person in KY to eat chili that way. I don't follow set measurements, but I can take a stab at it.
Bown about 1.5 lbs of good ground beef with 1 large chopped onion, 1 large chopped green pepper and 1 teaspoon minced garlic. Season it with salt, pepper, chili powder, Tiger seasoning if you can get it where you are, and cinnamon (trust me on this).
After it is well browned, drain the grease and move it to a soup kettle. Add two can diced tomatoes, two cans hot chili beans, one small can of diced jalapenos, and enough tomato juice or V-8 to cover it all. Simmer for about half an hour, then season with Tobasco to taste. The chili should be on the thick side. I serve it with shredded cheddar cheese, corn chips and diced onions.

I have a story from a Texas chili cook off that involves a journalist from the east coast who is in town to write a story about Texas traditions. They made him a judge with the promise of free beer and assurances that the chilis being sampled that day were relatively mild. The poor guy is basically destroyed from his intestines out by the experience but gets a lot of free beer. That will blow your mind.

Sure I'll share my secret recipe, but you have to keep it only between the two of us, okay? No only will this chili blow your mind it will blow your socks off too.
Chili Con Carne
2 cloves garlic, minced
½ c. onion, chopped
1 lb. ground beef
3 c. stewed tomatoes, do not drain
2 tbl. chili powder
1 tsp. salt
2 cans kidney beans, do not drain (about 3 cups)
1 small can sliced mushrooms, drained
1/8 tsp. pepper
Sauté garlic and onion in oil for about 2 minutes. Add ground beef; cook slowly until browned. Drain off fat. Mix in tomatoes and seasonings; cook tightly covered over low heat for 20 minutes. Add kidney beans and mushrooms; stir well. Simmer uncovered for additional 20 minutes.
Yield: 6 Servings

Chili
2 tablespoons vegetable oil
2 onions, chopped
3 cloves garlic, minced
1 pound ground beef
3/4 pound beef sirloin, cubed
1 (14.5 ounce) can peeled and diced tomatoes with juice
1 (12 fluid ounce) can or bottle dark beer
1 cup strong brewed coffee
2 (6 ounce) cans tomato paste
1 (14 ounce) can beef broth
1/2 cup packed brown sugar
3 1/2 tablespoons chili powder
1 tablespoon cumin seeds
1 tablespoon unsweetened cocoa powder
1 teaspoon dried oregano
1 teaspoon ground cayenne pepper
1 teaspoon ground coriander
1 teaspoon salt
4 (15 ounce) cans kidney beans
4 fresh hot chile peppers, seeded and chopped
Heat oil in a large saucepan over medium heat. Cook onions, garlic, ground beef and cubed sirloin in oil for 10 minutes, or until the meat is well browned and the onions are tender.
Mix in the diced tomatoes with juice, dark beer, coffee, tomato paste and beef broth. Season with brown sugar, chili powder, cumin, cocoa powder, oregano, cayenne pepper, coriander and salt. Stir in 2 cans of the beans and hot chile peppers. Reduce heat to low, and simmer for 1 1/2 hours.
Stir in the 2 remaining cans of beans, and simmer for another 30 minutes

Secret ingredient - shhh, keep it down. Pretty soon they'll all be doin' it! To every quart of chili, simply add a teaspoonful of baker's chocolate. A great many people don't realize how they crave chocolate, and even though this is too little to be obvious, it'll add just the right "zing"! to most chili recipes.

Don't laugh, but the best I've found is Wick Fowler's 3-Alarm mix. I sub kosher salt for his table salt, and usually dont add all the red pepper included. And use a coarse grind beef. Other than that, it's perfect IMO.
