Molasses Crinkles
Thick, chewy cookies with crackled sugary tops. Perfect for an after-school snack with cold milk.
3/4 cup shortening
1 cup packed brown sugar
1/4 cup mild-flavor molasses or full-flavor molasses
1 egg
2 1/4 cups Gold Medal® all-purpose flour
2 teaspoons baking soda
1 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground cloves
1/4 teaspoon salt
Granulated sugar
1 . Mix shortening, brown sugar, molasses and egg thoroughly in large bowl. Stir in remaining ingredients except granulated sugar. Cover and refrigerate at least 2 hours.
2 . Heat oven to 375°F. Grease cookie sheet. Shape dough into 1 1/4-inch balls. Dip tops in granulated sugar. Place balls, sugared sides up, 3 inches apart on cookie sheet. Sprinkle each with 2 or 3 drops of water.
3 . Bake 10 to 12 minutes or just until set but not hard. Remove from cookie sheet to wire rack.

no carbs, so that leaves out chips, crackers, cookies and candy. Skip the bread and french fries also.
no fats, so that leaves out ice cream and cheese
You might have a sprig of broccoli, but skip the carrot, since that is a carb also. Have some peppers and cauliflower.
Non fat yogurt would be yummy.
Even a bowl of high fiber cereal, like Rasin Bran with some 1% milk would be a terrific snack.

Sorry, I don't have a "right-this-minute" recipe, but if it's any consolation, this recipe freezes well after cooking - just pop them in the microwave about 15 - 20 seconds.....
SPINACH & CHEESE TORTILLA ROLLS
4 (8 inch) soft tortillas
6 oz. softened cream cheese (the tub-kind is easiest to use)
1/2 cup chopped green onions
1/4 cup sour cream
1/2 tsp. garlic salt
1 (10 oz.) pkg. frozen, chopped spinach - thawed and well drained (best to pat dry a bit with some paper towels)
1/4 cup grated Parmesan cheese
Make soft tortillas more flexible by placing them on microwave safe plate, cover with wax paper, and cook on high (100%) power for about 20-30 seconds. In medium mixing bowl, stir together cream cheese, sour cream, green onions, and garlic salt; fold in spinach. Spread a layer of the mixture evenly over one side of each tortilla; roll up each tortilla and place them in large sealable plastic storage bags, refrigerating for 1 to 4 hours. To serve, cut each roll into 3/4-inch thick slices; place on cookie sheet cut-side down, sprinkle with Parmesan, and bake in 400 degree oven for 10 minutes or till bottoms are light brown.
I know, not a good short-term recipe, but really great to have on hand in sealable storage bags in the freezer; just take out as many as you're hungry for and microwave about 15 - 20 seconds; also great if someone comes over and you want a snack on hand for a guest.
