Anything you can cook on top of the stove. Alternately salads, with protein like a Chef's salad. Tuna salad, Chicken salad. Use cole slaw and/or potato salads as sides. Treat the meal like a picnic. Sandwich meat with sliced veggies and condiments also work. You can make a Rueben sandwich with rye toast, corned beef and melt the cheese in your toaster oven.

Something cold, like a sandwich or salad, or have fruit. Or have like those vegitable trays w/ dip. Kinda like a picnic. U wanna try not to heat up ur house by cooking on the stove or in the oven. U can always have take out or order in.

Ya might try a pasta salad. Cook the pasta ahead, chill it in the icebox and then add your choice of cooked veggies and instead of mayonnaise, use plain non-fat yogurt as a dressing. I like mine with green beans and chunk tuna stirred in!

On hot days I like to make something cool, and not too heavy or filling. I like to make Taco Salad, with garlic/cheese bread, and cantaloupe slices. Nice, cool refreshing meal for a hot day.
Taco Salad:
First you cook your taco meat (I use ground turkey) with the seasonings. Set it aside to cool.
Then I mix lettuce, avocado cubes, black olive slices, grape tomatoes, grated cheese, and the taco meat. Then take a few handfulls of Nacho Cheese Tortilla chips and crumble them on top. Then toss, lightly. Top with Catalina French dressing (or Honey French). Toss until coated.
Garlic/cheese bread:
Make diagonal slices of French bread. Butter one side and sprinkle garlic powder and alittle cheese (whatever kind you like). Bake in 400* oven until the edges start to crisp and the cheese is melted.

Dont cook! Have a salad with all the trimmings.

Not cook just make a nice salad with leftover cooked meat. It be beef, chihcken, turkey, fish. It doesn't matter. Go to foodnetwork.com and you'll find a lot of them.
