Buy whole chicken wings, then seperate into drummettes, flats and tips. Discard tips or save to make stock. Put other pieces in a large plastic bag, then add one package taco seasoning and one HALF package ranch seasoning mix. Shake to coat.
Heat peanut oil in a large pot, and fry in several batches until the skin on the wings is quite crispy. Drain well.
Put wings in another bag, add a good wing/hot sauce and shake to coat again. Put wings on a cookie sheet, and bake at 375* unitl they are completely done and kinda tender. But don't crowd them, or you will lose the crispness from frying them.
I know this sounds like a lot of trouble, but they are AWESOME, especially with blue cheese dressing and celery!

DOWN SOUTH HOT WINGS

5 lbs. chicken wings
Louisiana brand hot sauce (only this brand will do)
dry Ranch dressing mix (2 packets)

Separate the drumettes and wings; discard the tips. Clean and marinate wings in hot sauce at least 1 hour or overnight.
Preheat oven to 350°F.

Empty wings and sauce into baking pan and sprinkle the top lightly with dry Ranch dressing seasoning (this makes a crust on the top of the wings that is delicious).

Bake at 350°F for about an hour or until wings are done thoroughly. Mix the other pack of Ranch dressing seasoning as directed for dipping.

Go to the store and buy a pack of uncooked wings. Take them home and season them the way you would do regular chicken. Then, place the wings in a pan and drench them with hot sauce, make sure you get all sides. If you have some hot peppers or lemons, squeezing a little juice on them will give them a nice flavor. Place them in the oven on about 350* for 45 minutes or at least until you think they are done....bon apetite! or howeva u say that
