It varies, but usually around 7 pounds (fillet Mignon is what I am assuming you mean) per steer or heifer. Bulls and cows typically aren't harvested. They are normally kept for breeding. Cows are female cattle that have had a calf. Sometimes bulls and cows are culled and then harvested, but they are mostly used for hamburger since their meat is not as tender.
A carcass is usually around 700 pounds. About 525-575 is actual meat after the fat is trimmed. So the fillet is around 1 percent of the entire carcass.

The Fillet comes from the tenderloin. IT weighs from 5 to 11 lbs. You get somewhere around 600 lbs of meat per cow. We dont eat Bulls they are to tough maybe hamburger but I doubt it.

The average cow provides no more than 4-6 pounds of filet per animal. Because the muscle is non-weight bearing, it receives very little exercise, which makes it tender.
The filet can be cut into 1-2 inch thick portions, then grilled and served as-is, with minimum seasoning.
