Marinade for Steak
Ingredients in a marinade can be varied, but it is important to use wine, vinegar, lemon juice, or some acidic liquid to break down the connective tissues. This process will make the steak more tender. Remaining marinade ingredients add flavor. Use a good-quality olive oil or walnut oil; add good-quality wine or vinegar and a combination of fresh and dried herbs, seasonings, garlic and soy sauce to make a flavorful marinade.
1 cup olive oil
1/2 cup sherry wine vinegar or red wine or white wine or 1/4 cup lemon juice
2 tablespoons soy sauce
2 cloves garlic, sliced
pepper, Coarsely ground
red peppercorns (optional)
1 teaspoon italian seasoning
1 teaspoon sugar
1 tablespoon Worcestershire sauce
4 servings
1. Place all ingredients in glass screw-top jar; shake vigorously.
2. Arrange meat in shallow glass dish; pierce with a fork.
3. Pour marinade over meat; turn to coat.
4. Cover and refrigerate several hours or overnight, turning meat occasionally.
5. Remove meat from marinade; pat dry.
6. Remove any pieces of spices or herbs that may stick to meat.
7. This recipe is a steak marinade, but the ingredients can be adapted for other meats using the same techniques.

Best ways to marinate a steak, is to let it sit in frig for an extended period of time, 1 1/2 hrs. to 8/9 hrs. (for bbq or big dinners). Make sure you put the sauce on it, before any spices or herbs.
Then make sure you don't over cook it, or it will lose its flavor much faster. sometimes, if you want a better taste cook it, really slow and not too high. Even though, it's more time consuming your meal be more enjoyable and satisfying. (on a stove)
(in an oven) just a baking bag or something and don't cook it too fast.

Marinades are way over rated. Use some spice rub or just mix a bunch of spices and rub it on. Most marinades are aweful and will burn and taste like KAKA when you cook it. Especially if you grill it.
Whatever you do do not use Italian Dressing. That is gross and will completely destoy your meat. Only cluelss people who think Subway and MCD's are the best food ever do that.
I promise Cook two steaks and the spice rubbed one will be much better. If you like a particular marinade, slap it on at the very end and do not burn it. SOme of them are quite good that way, but defenitely most people over cook them

Marinade: . You'll have two liquids: soy sauce, and Worcestershire sauce, and the ratio is 2:1. I start with one cup of soy sauce and 1/2 cup Worcestershire. Next add 1 tablespoon brown sugar, 2 tsp minced garlic, 1 tsp pepper, 1/2 tsp rubbed basil, 1/2 tsp rubbed oregano. Mix everything well (still in the measuring cup) and pour over the steak. Repeat, if necessary.

Beer is the best, let it "marinate" for a couple of hours. You can also use Italian dressing, but I'm not fond of that flavor. Beer is your best bet.

Poke holes in the steak and pore beer over it while it is grilling. Makes it tender and juicy.

soak your steaks in beer for about 1 to 2 hours before you cook them, i personally like honey brown beer to do it, bud budweiser works great too

Great for burgers too.
Put it on while the meat is cooking.
