Buy mason jars if you don;t already have them .Hardware stores have them or buy in bulk online or at a kitchen depot.

First boil some water and soak eeach one in it for a couple of minutes. Remove it with tongs and place on the counter. This is a sanitizing steps. There cannot be any bacteria inside of it.

Cook your sausage or whatever else you want to can up to at least 180 degrees. Put it in the jars without dripping on the edges and seal the jar while steamy hot.

When it cools down, the pressure will be reduced and the jar will be in near vacuum state. no bacteria will be present since you killed it all.

Really easy

Good luck.

I would check on the food network web site; as you know, if things aren't canned properly, people can die from botulism!
