I have found this easiest for beginners:

In a skillet melt 2 tablespoons of butter.
Add 2 tablespoons of flour to the melted butter stirring constantly and cooking until it's light golden brown and becomes thick.
Add meat juices, by a soup ladle, one at a time and continue to mix adding more meat juices, canned broth or water until you have the desired consistency you want.

Usually makes about 1 to 1 1/2 cups of gravy.

Oldschool country sawmill gravy:

You need a large pan not too deep, with drippings from chicken, pork chops or other meat. you want drippings plus 2-3 tbsp of oil in the pan. over med. heat add 2-3 tbsp of flour, stirring constantly add 2-3 cups of milk. stir until boiling, let it boil 1 min. then remove from heat, salt and pepper to taste. My mom actually adds some chicken bullion to the milk before adding to the pan, everyone loves it. This is the best gravy in the world to put on fried chicken.

It's very easy. If you are making fried chicken or anything else fried, leave about two tablespoons of the dripping in the pan. Then add two tablespoons of flour. Using a whisk stir it around until it gets dark brown (you'll think your about to burn it...but trust me here...it's not) then add milk. Just pour it straight from the container and keep stirring. It will become thick really quick. Add more milk and just keep stirring. Turn your heat down to a medium low at this point. Keep adding milk until it's to the consistancy you like. Add pepper and a little salt if you need to. Good luck!

Foolproof Gravy
Add this recipe to your collection, and you won’t need to worry when it’s your turn to host a turkey-and-gravy dinner!

1/4cup turkey drippings (fat and juices from roasted turkey)
1/4cup Gold Medal® all-purpose flour
2cups liquid (juices from roasted turkey, broth, water)
Browning sauce, if desired
1/2teaspoon salt
1/2teaspoon pepper

1 . Pour drippings from roasting pan into bowl, leaving brown particles in pan. Return 1/4 cup drippings to roasting pan. (Measure accurately because too little fat makes gravy lumpy.) Stir in flour. (Measure accurately so gravy is not greasy.)
2 . Cook over medium heat, stirring constantly, until mixture is smooth and bubbly; remove from heat. Stir in liquid. Heat to boiling, stirring constantly. Boil and stir 1 minute. Stir in a few drops of browning sauce. Stir in salt and pepper.

Get gravy powder from Mcormick at the store and mix it with water or milk, then you can enjoy the easy-to-make artificial gravy. Be sure to follow the directions exactly.
