I found 2 paintings stored in an old chicken house out in the open along with other things, and I wanted how do i get the dirt and other things off without damaging the paintings itself?

Take it to an "Art Restorer", especially if they are antique or valuable works. If not you could carefully clean them up yourself

Easy, cut a potato by the middle, then rub the potato on the painting surface, be gently, cut a slice everytime is stained and rub again finally remove all wit a clean white and wet piece of fabric. Remember be very carefully.
If it doesnt work, try the same but this time with an onion.

Bring them in and make sure they are dry. Brush them off gently with a very soft hair brush. Like a big soft blush makeup brush. It might take a while to brush it off layer after layer. Then estimate if there is any mold or mildew damage to the canvas itself. Check the framing and such also for damages. If you see no further damage, the canvas can be wiped off with a soft soapy cloth. Rinse rag often and continue to wipe carefully until canvas is clean. Same with frame until clean. Then you can actually put some wood polish one the frame to give it some shine.
