Spring Rolls Recipe
Ingredients
For making rolls:
Maida(Allpurpose flour) -1/2 cup
Milk - 1 cup
Salt - 1/4 tsp
Soda-bi-carb - A pinch
Oil for deep frying
For stuffing:
Onion (finely chopped) – 1 no
Carrot - ½
(cut into thin and long strips)
French beans (half boiled) - 7-8 nos
Cabbage - ½ cup
(cut into thin and long strips)
Capsicum - ½ cup
(cut into thin and long strips)
Ajinomoto - A pinch
White Pepper - ½ tsp
Sugar – ½ tsp
Salt – As reqd
Soya sauce - 2 tsp
Oil - 1 tbsp
Preparation Method
For stuffing:
1)Cut the sides of the beans and put them in boiled and salted water. Keep it for one minute. Strain it through a strainer.
2)Cut it along with all the other vegetables into thin and long slices.
3)Heat oil in a pan or a kadai.
4)Add chopped onions and sauté for 1 minute.
5)Add sugar, ajinomoto, salt and white pepper.
6)Add all the vegetables and cook for 1 minute.
7)Add soya sauce and mix well.
For making spring rolls:
1)Add salt to maida, milk, along with soda-bi-carb and make a thin batter for making pancakes.
2)Heat a nonstick pan.
3)Put half of the paste onto the pan and stir the pan so that the paste spreads evenly on the pan.
4)When the bottom of the pancake is cooked, remove from the pan and keep aside on a dry cloth. Don’t cook the top portion of the pancake.
5)Make the second pancake in the same way.
6)Put half the stuffing on the cooked side of each pancake. Fold both the sides onto the stuffing. Hold sides and turn upward.
7)Mix one tsp. of corn-flour in 1 tsp. of water. Cover the sides with the corn-flour paste.
8)Heat oil in a pan or kadai. Fry spring rolls on both the sides till it becomes golden brown.
9) Place them on a tissue paper.
10)Cut them into 1 inch pieces.
:- Serve hot with Ketchup and Chilly Sauce.

Filling1 cup thinly shredded cabbage1 cups spring onions-including leaves, finely chopped1 cup thinly shredded carrot1/2 tsp salt2 tbsp oil4 cloves garlic-very finely chopped1 tsp soya sauce1/4 tsp ajino moto -optional2 tbsp celery-chopped fine1 tbsp flour, made into thin paste by adding wateroil for deep frying
Method: Make the pancakes with the pancake ingredients.Heat the 1 tbsp oil and stir-fry the garlic and onions over high heat till the onions are a little soft. Add the rest of the filling ingredients and turn around a few times, still over a high heat.Take a pancake and place a heaped tbsp of filling towards one edge. Fold that edge over the filling, then the two sides thus formed over the fold, and roll over till the end, sealing that edge with the flour paste. It is very important to seal the filling in, so that it does not spill out while frying. Double fry the pancakes.

INGREDIENTS
For cover:
1/2 cup plain flour
1/2 cup cornflour
2 tbsp. hot oil
1/3 cup water
1/3 cup milk
For filling:
1/2 cup mixed vegetables julienned (carrots, beans, cabbage)
1 tsp. capsicum thinly sliced
1 bunch spring onion cut 1pieces
1/4 cup bean sprouts
1 onion finely chopped
1/4 cup boiled noodles
salt to taste
chilli cauce
1 green chilli finely chopped (optional)
1/2 tsp. vinegar
1 tbsp oil
METHOD
1.Mix all ingredients and form batter.
2.Make thin round pancakes on a hot griddle.
3.Do not over roast.
4.Cool
1.Heat oil in a wok, add all vegetables.
2.Stir fry, add noodles.
3.Season with salt, chilli sauce and green chilli.
4.Cool
How to Fry
1.Put oil in a kadai to deep fry.
2.Place some filling on a pancake end to end.
3.Fold ends and hold, then roll in a tight roll
4.Seal edge with water. (or a paste of cornflour and water)
5.Deep fry till golden brown.
6.Cut into convenient sized pieces and serve hot with tomato or chilli garlic sauce.
Making time: 45 minutes
Makes: 5 servings
Shelflife: Best fresh only.

Samosas
Ingredients
(16 servings)
1/2 lb Very lean ground beef
1/2 ea Medium onion, chopped
1/2 ea 1 in fresh ginger root
6 ea Cloves garlic
1/2 ts Cumin seed
1/2 ts Salt (optional)
1 ts Chili powder
1/2 ea 1 in cinnamon stick
1 ea Cardamom seed (optional)
1 c Water
1/3 c Ciliantro leaves, chopped
2 c All-purpose flour
2 tb Vegetable shortening
10 tb Water approximately
2 ts Liquid egg substitute
Instructions
For filling: In blender or food processor, grind onion, ginger root, garlic, cinnamon stick, cardamom, cumin and salt. Break cinnamon stick into pieces before adding to blender.
Spray a medium skillet with non stick spray. Add ground beef and blend the spice mixture. Cook until beef is browned. Add 1 cup water and cook until water evaporates. Add coriander leaves and stir to mix.
For pastry: Cut shortening into flour until it resembles coarse meal. Sprinkle with water, 2 teaspoons at a time, and mix with a fork until you can form it into a stiff dough.
Shape dough into ball and cut into 8 equal pieces. Shape each piece into a ball and roll on lightly floured board into a 6-inch flat circle.
Cut circle in half. Place a scant 1 tablespoon of filling on each half.
Moisten edges of pastry with water. Fold and pinch edges together. Brush lightly with egg substitute for golden brown pastry. Bake at 425 degree for 20 to 25 minutes or until golden brown.

Do you mean samosas? Make your filling to choice veg or nonveg. Roll out strips of Filo pastry then put filling on strip, fold one side then the other, tuck last flap in and fry in oil.
