Meatballs in Chipotle Sauce

Makes 6 servings

Ingredients:

Meatballs:

1/2 pound finely ground beef
1/2 pound finely ground pork
1/3 cup finely chopped onions
2 tablespoons flour
1 tablespoon fresh minced cilantro
1/2 teaspoon dried oregano
1/4 teaspoon ground cumin
1 egg, beaten
3 tablespoons vegetable oil

Sauce:

1 tablespoon vegetable oil
1 chopped onion
2 garlic cloves, minced
1 cup tomato sauce
2 chipotle peppers, canned in adobo sauce, stemmed and chopped
2 tablespoons chipotle sauce (from canned chilies)
1/2 cup beef broth

Preparation:

Meatballs:

Combine all the meatball ingredients, except the oil, and mix well. Form into 1 1/2-inch meatballs. Brown the meatballs in the oil, remove and keep warm.

Sauce:

To make the sauce, add the oil to the pan and sauté the onion and garlic until soft. Add the remaining sauce ingredients, bring to a boil, reduce the heat and simmer for 15 to 20 minutes until the sauce is thickened.

Place the sauce in a blender or food processor and purée until smooth. Return the sauce to the pan, add the meatballs, and heat through.

ITALIAN MEATBALLS 1 lb. ground beef 1 egg 1 c. bread crumbs (Italian seasoned) 1/2 c. milk 2 tsp. grated Parmesan cheese (optional) 1/2 tsp. oregano 1 tsp. parsley flakes 1 tsp. onion flakes, powder or salt 1/2 tsp. garlic powder Combine ingredients. Shape into 1 1/2 inch meatballs. Place in covered skillet (fry pan) in oven 15 minutes (325-350 degrees). Do not overcook. Turn meatballs over. Cook for another 15 minutes. Drain liquid. Place meatballs in desired spaghetti sauce. Heat until sauce is hot and serve. That first answer is missing a key ingredient for cocktail meatballs--you need chili sauce WITH the grape jelly. Use equal amounts.

Feel free to substitute lean ground beef for the ground turkey.
INGREDIENTS:

* 2 tablespoons olive oil
* 1 (20 ounce) package ground turkey
* 1 egg, beaten
* 1/3 cup Italian seasoned bread crumbs

DIRECTIONS:

1. Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13 inch baking dish with the olive oil, and place it in the oven while preheating.
2. In a medium bowl, mix together the ground turkey, egg, and bread crumbs using your hands. Using an ice cream scoop if possible, form the meat into golf ball sized meatballs. Place about 1 inch apart in the hot baking dish. Press down to flatten the bottom just slightly.
3. Bake for 15 minutes in the preheated oven, then turn them over, and continue baking for about 5 more minutes, or until somewhat crispy on the outside. Serve with pasta and sauce or however you'd like.

Italian Meatballs
I just plain love good meatballs!, and mine are pretty darn good!
1 1/3 lbs lean ground beef
1/2 cup dry breadcrumbs
1/4 cup ground parmesan cheese
1/2 teaspoon italian seasoning
1/4 cup milk
1 1/2 teaspoons dried onion flakes
1 teaspoon salt
1/2 teaspoon worcestershire sauce
1 egg, beaten
1/4 teaspoon garlic powder
pepper
4 servings

1. In large bowl, mix all dry ingredients.
2. Add rest of ingredients and lightly mix, but mix well, with hands. Form into 20 meatballs.
3. Place them on lightly oiled cookie sheet.
4. Sprinkle tops lightly with coarse ground pepper.
5. Bake in 400º over for 20-25 minutes. *Mine always take 22 minutes in my oven.
6. If they are still just a little pink inside, it's ok if they are to simmer in a sauce, otherwise bake til done.
7. Simmer in spaghetti sauce on low for 5-10 minutes.
8. *You can omit the parmesan and use parsley instead if italian seasoning, and use these meatballs for other recipes.

Barbecued Meatballs:
Meat Mixture: 1.5 lbs ground beef, 1/2 c soft bread crumbs, 1 egg (slightly beaten), 1 tsp salt, pepper to taste.

Sauce: 1 c ketchup, 2 tblsp brown sugar, 1 tbsp Worcestershire sauce, 2 tbsp vinegar, 1/4 tsp salt, dash of pepper.

Mix together meat ingredients. Shape into balls and place in baking dish. Mix together sauce ingredients and pour over meat. Bake for about 1 hr. and 15 minutes at 250 degrees, basting once or twice.

Prep time is about 15 minutes and feeds a family of 4. My whole family loves it!

1 lb lean hamburger
4 links Italian sausage (use turkey sausage for lower fat)
1/4-1/2 cup bread crumbs
1 egg
salt and pepper to taste
1/4 c grated parmesean
1 T chopped parsley

Mix all ingredients together. Place into spaghetti sauce to cook for 45 minutes or until done.

I don't like to brown mine first. I think they absorb more flavor this way.

EASy MEATBALLS
1-2 pounds ground beef[ or ground turkey]
1 pkg onion soup mix
2 lg eggs
1 c rolled oats
i can tomatoes soup divided
2T brown sugar

mix meat soup mix oats eggs an 1/2 the can of soup.. shape into 1 in size balls.... take remainin soup an bring to boil[ add sugar when u heat it] drop a couple meat balls at a time into boilin soup cook 5-8 min place in shalow bakin pan. once all meat balls are in pan place in oven fer bout 30 min at 350[ or in crockpot fer several hrs on low] this is good served with rice

1lb gr beef
1 egg

1 Tbls mustard
1/4 cup bbq sauce
spices - I use parsely and italian seasoning

Use whatever you have in the cupboard that you like.

Fry in a frying pan over med until cooked through. Turning a couple of times.

2 lbs of lean ground beef or sirloin
2 slices of bread (pour 1/4 cup of milk on them)
1 tablespoon of crushed garlic
salt and pepper
1 tablespoon of oregano and 1 tablespoon of basil
2 tablespoons of minced onion

Mix the above ingredients together thoroughly..roll into large meatballs...grill on stove in some olive oil until browned and then put into your homemade or already prepared sauce...tender and flavorful

I buy frozen meatballs from the grocery store, throw them in a crock pot, pour a bottle (or as much as needed) of honey flavored barbecue sauce, throw in some pineapple chunks. Although not authentic, people love them.
