any suggestion welcome as ive no idea how to use lemon grass

Thai Style Chicken (4)

Ingredients...

1 lb skinless, boneless, chicken thighs
1 stalk fresh lemon grass
1 tbsp groundnut oil
1 onion, thinly sliced
2 tbsps coarsely chopped garlic
2 tsps salt
2 tsps lime zest
3 fresh chillies, seeded and finely shredded
2 tsps sugar
large handful basil leaves
red and green peppers, seeded & sliced

MARINADE...

2 tsps light soy sauce
2 tsps rice wine or dry sherry
1 tsp sesame oil
2 tsps cornflour

Instructions...

1) Cut the chicken into 1 " chunks. Combine in a bowl wih
the soy sauce , rice wine or dry sherry, sesame oil and
cornflour.Marinate for 20 minutes.

2) Peel the lemon grass to reveal the tender centre and cut
into 2" peices. Bruise with the back of a knife.

3) Heat a wok until very hot. Add the oil then the chicken
and stir fry for 5 minutes until browned. Remove the
chicken and drain off the oil.

4) Return the chicken to the wok and add all the other
ingredients except the basil leaves. Cook for 8-10
minutes, stirring occasionally, until the chicken is
cooked.

5) Add the basil leaves and stir well. Serve at once with
rice.

Lemon Grass Kebabs

Flavour-packed pork and a sensational coconut sauce make Sophie Grigson's moreish lemon grass kebabs the best kind of finger food

Servings: 3-4
Level of difficulty: Easy
Preparation Time: 15 minutes
Cooking Time: 10 minutes


Ingredients
1 tbsp sunflower oil
2 garlic cloves, crushed
2 Shallots, finely chopped
2.5 cm root ginger, finely chopped
1 small green chilli, finely chopped (optional)
1 bunch of coriander
3 tbsp thick coconut milk or coconut cream
juice of 1 lime
2 tsp brown sugar
1 tbsp Fish Sauce

For the kebabs:
8 lemon grass stalks, about 12-13cm long
500g minced pork
3 fresh kaffir lime leaves, very finely chopped
1 1/2 tbsp Fish Sauce
2-3 tbsp Sesame Oil
lime wedges, to serve


Method
1. To make the sauce, heat the sunflower oil in a pan over a medium heat and gently fry the garlic, shallots, ginger and chilli until soft and golden. Cool slightly and then place into a food processor. Add the remaining sauce ingredients and process until smooth. Add a little water if necessary; the mixture should have a thick but creamy consistency. Taste and adjust the seasoning as required.

2. For the kebabs, mix the pork with the kaffir lime leaves and fish sauce. Knead lightly until the mixture comes together. Divide into 8 portions and roll each into a sausage shape. Flatten the mixture on the palm of your hand, and then lay a lemon grass stalk down the centre. Bring the pork mixture around the stem to enclose it. Mould the meat firmly around the stem and roll it gently on a work surface to even it out. Set aside until needed.

3. Preheat a grill and line the grill pan with silver foil. Brush the kebabs with sesame oil, then grill, turning once, for about 4 minutes on each side, until the meat is golden brown and cooked through.

4. Serve immediately with the coconut sauce, lime wedges and any remaining pan juices.

I can give you a marinade

Vietnamese Lemongrass Marinade
Ingredients

* 1/4 c Lemongrass, chopped -(4-6 stalks) or
* 1/4 c Dried lemongrass or
* 6 Strips lemon zest
* 3 Garlic clove(s) -minced (1 tbs)
* 2 (to 3) shallots -minced (3 tbs)
* 2 Serrano, jalapeno or -Thai chilies, minced
* 2 ts Brown sugar -or to taste
* 3 tb Fish sauce
* 3 tb Lime juice
* 1 ts Vietnamese or Thai -hot sauce or chili oil -or Tabasco sauce

Directions
Cut off the top 2/3 of each lemongrass stalk, trim off the outside leaves and roots, and slice the core thinly.

Grind the lemongrass, garlic, shallots, chilies, and brown sugar to a fine paste. Work in the fish sauce, lime juice, and hot sauce. Marinate fish or thinly sliced poultry or beef for 1-2 hours, turning once or twice.

Makes enough for 1-2 pounds seafood, poultry, or meat.

Hiya! The above mentioned ingrediens are used for Thai cooking. My personal favoutrite is thai red curry. Get some red curry paste, and your choice of meat (chicken works best, and can even be substituted for veg). Fry onions, garlic and chillies in oil until fragrant, add the curry paste, and stir. Add the meat or veg (in the case of meat i find it works better to cook the meat before hand). Stri until the meat is covered in the paste. add coconut milk, and simmer. Add lemon grass and a table spoon on fish sauce. (the thai never use additional salt, they use only the fish sauce so it a vital ingredient.) Simmer and before serving remove the lemongrass and add the lime juice. Serve with basmati rice. Enjoy!

LEMONGRASS CHICKEN

Ingredients:
3 pounds whole chicken
1 cup water
1 small onion -- minced fine
2 tablespoons red pepper flakes
10 pieces lemon grass stalk
1/2 cup heavy cream
1 pound fresh mushrooms -- sliced thin

Directions:

Stuff half the lemongrass shoots into the chicken cavity. Put the chicken in the crockpot. Add remaining ingredients and cook on low for 4-6 hrs until the chicken is fork tender.

two tbs. oil in your food processor, add lemon grass lime chilis cilantro and garlic. makes paste. use some as a rub on bbq meat (chicken, pork, or beef)before you cook and add mayo and lemon juice to the rest for an aioli dipping sauce.
