I'm making a Birthday Cake for someone who is mad about violet creams and I'd love to make violet flavour icing for it.

I'd love to know the answer to this question too. I've been trying to get it for years, without success. I have a spectacular cake recipe in mind for it.

I don't know about violet essence but you can put actual violets on the cake if you can find some, they are edible.

Crush Parma Violets and use that as the sugar in the icing recipe.
