Homemade Beef Jerky

5 pounds very lean beef or venison, trimmed of all fat
3 tablespoons kosher salt
2 tablespoons ground black pepper
2 tablepoons Essence, recipe follows

Cut the meat into strips 1-inch wide and 1/2-inch thick, and spread on baking sheets. In a bowl blend the seasonings. Season the meat strips on 1 side, then turn and season the second side. Refrigerate, covered, overnight.
Preheat the oven to 200 degrees F.
Cook the meat until it is completely dried, 6 to 8 hours, turning as needed to dry uniformly. Remove from the oven and allow to cool. Eat as desired, or keep tightly covered, refrigerated, for up to 1 month.

Essence (Creole Seasoning):
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried leaf oregano
1 tablespoon dried thyme

Combine all ingredients thoroughly and store in an airtight jar or container.
Yield: about 2/3 cup

This is an awesome recipe i use if you like soy sauce

buy a very lean beef roast.
slice in very thin strips( i usually partially freeze the roast it is easier to slice)

Marinate in mixture for over night

Marinating mixture.

2 large bottles soy sauce
1 tablespoon white vinegar
1 tablespoon of lemon juice
2 cloves garlic minced
1 small onion

mix all ingrediants together
place sliced beef roast into mixture, and press down so all is covered
cover the bowl and place in refrigerator until the next day
place in dehydrator
dehydrate to the desired consistancy you like. usually 4-6 hours depending on your dehydrators heat factor.

You can use deer for this recipe also and it is excellant.

When we make jerky we use a deyhdrator. You can purchase different flavored mixes at the grocery store and you mix that with the amount of meat (ground beef, venision) that it calls for.
We like to use a jerky gun (usually sold near the dehydrators or jerky mixes) That way, we can make flat jerky or tube shaped(like slim jims)
The kids love it that way and there are a lot of different flavors to try.
You can also make it in your oven, but the dehydrator is so convenient.

We get a roast of beef.
Cut it into very small slices.
Put a little garlic ,salt and a small amount of cooking oil.
Place it on a flat cooking sheet and in the oven at 200 deg.
Leave for two hours and try it for taste.

Take the fat off of acow and place it in sause and seasonings for a day than place on the pit for three hours
