It is said that an accelerarometer or a Transducer can be used to measure fluidforces acting on a wall.How do I use these kind of Instruments?

Sounds like you want to measure pressure. However on a dam wall all you really need is the dimensions of the wall under water and the result can be calculated as the pressure of water with depth is well known.

Otherwise some sort of strain guage might tell you if the wall is flexing too much and about to break?
