QUICK CHOCOLATE EGGLESS CAKE
1-1/2 cup flour
1/3 cup cocoa powder
1 tsp baking soda
1/2 tsp salt
1 cup sugar
1/2 cup vegetable oil
1 cup cold water
2 tsp vanilla extract
2 tsp vinegar
Preheat oven to 375°F.
Spray a small baking pan (8x12) with vegetable spray or Baker's Joy.
Combine dry ingredients directly in the pan. Mix all the wet ingredients
In a small bowl, combine remaining ingredients leaving out the vinegar until the final step.
Combine wet and dry ingredients, stirring together in pan until well combined. Stir in the vinegar rapidly and immediately place pan into preheated oven and bake for 25 to 30 min.
Optional: You can stir in 1/2 cup semi-sweet chocolate chips just before baking to make a richer cake with melted chocolate bits or swirls
Eggless Chocolate Cake (with 2 cups of coffee)

3 cups all purpose flour, less 3 tbsp.
2 cups sugar
2 tsp. soda
1 tsp. salt
1/2 cup cocoa
2 cups cold coffee
1 cup vegetable or corn oil
2 tbsp. vinegar
1 tbsp. vanilla
Sift together flour, sugar, soda, salt, and cocoa.
Add coffee, oil, vinegar, and vanilla and beat until smooth using an electric mixer.
Bake in greased and floured 9 x 13 pan at 350 degrees for 40 minutes or until tests done.
As soon as cake is out of oven, cover it with the following icing.
CHOCOLATE ICING
1/3 cup soft margarine or butter
3 cups sifted powdered sugar
3 squares unsweetened chocolate, melted
3 tbsp. cream or evaporated milk, or plain milk
1 1/2 tsp. vanilla
Mix margarine and sifted powdered sugar until smooth.
Stir in melted chocolate cream or milk and vanilla, adding a bit more milk if necessary.
You could substitute cocoa for chocolate if needed.

Icing:

6 tbsp. shortening
1 cup white sugar
2 tsp. vanilla
1 tbsp. cornstarch
1/2 cup warm milk
Mix together the butter, shortening, sugar, and vanilla. Add the cornstarch to the warm milk, and then add this to the first mixture. Whip together for about 6 minutes. It's going to look a little weird at first, but just keep whipping it with an electric mixer.
Here's the recipe for the eggless cake..
2 1/2 cups all purpose flour

1 can (300ml) sweetened condensed milk
1 cup orange juice
2 tsp. vanilla extract
1 cup melted butter
Sift together the flour, baking powder, and baking soda. Make a well in the center and add the condensed milk, orange juice, vanilla extract, and melted butter. Mix together. Bake for about 30 minutes (check the center) at 350F.
