have tried vinegar in the water, but the egg white still spreads all over the pan, not good when trying my best to impress.

1/4 cup white wine vinegar
Salt
6 freshest eggs possible

In a large, deep saute pan bring 2 1/2-inches of water to a boil. When the water comes to a boil, lower the heat to a bare simmer. There should only be small, infrequent bubbles on the surface. Add 1/4 cup vinegar and some salt to the water. Crack 1 egg into a small bowl, making sure the yolk remains unbroken. Gently slip the egg into the simmering water, using a spoon to make sure the egg is completely covered. Repeat with the remaining eggs. Cook to desired degree of doneness, 3 to 5 minutes. When the eggs are done, remove from the water with a slotted spoon. Place on clean paper towels or kitchen towel to drain. Set aside.

Make sure the water is just bubbling (too many bubbles will break the white up). Use a VERY fresh egg (it should sink in a bowl of colkd water when whole. Break the egg into a bowl. Stir the water until it forms a 'whirlpool' (add vinegar if you want)- drop the egg in. It will spin as the outside cooks, sealing it into a round shape.

Microwave Poached Eggs
I have been poaching eggs in the microwave for many years. For me this is the best way to prepare poached eggs for 2. It is quick, easy and almost foolproof. Please make sure you use a toothpick to pierce the yolk before cooking!
1 large egg
1/8 teaspoon white vinegar
1/3 cup water
salt and pepper
1 servings

1. Add the water and white vinegar to a 6 ounce custard cup.
2. Break egg into cup, pierce egg yolk with toothpick, and cover dish loosely with plastic wrap.
3. Place in microwave and cook for 1 minute or until desired doneness.
4. You may need to experiment with cooking times based on the wattage of your microwave and taste preference.
5. Immediately remove egg from hot water with a slotted spoon as it will continue to cook.
6. Serve with salt and pepper to taste

Maybe you need to try a different technique...???

You can buy an egg poacher, but if you only have a pan, the water needs to be boiling vigorously this way the egg starts to cook as soon as it hits the water, put a little olive oil in the water as well. Try this it works for me.

i've tried the swirly water approach and haven't been able to get a decent poached egg that way. microwave is best - get one of those cheap little microwave plastic egg poachers and eliminate one stressful thing in your life. you'll have to experiment a bit to get the timing perfect, but it only takes about a minute. poke the yolks with a toothpick first, and add a couple drops of water to the cups before you put the eggs in. focus your energy on making an amazing hollandaise sauce instead.

Add the vinegar and stir the water before adding the egg. The water has to be moving in a slow circular motion

Get your water boiling, having added a splash of vinegar.

Stir the water really really fast til you have whirlpool type thing going on! Then drop you egg right into the centre and it should work!

Good luck... or you could just buy an egg poacher, much easier !

I was just wondering who you are trying to impress with a poached egg?
And, umm, what were you hoping for?
Do hope it wasn't for your bank manager at a working breakfast....
But know what you mean... I gave up trying to poach the things about 10 years ago because the egg ends up looking like a splattered jellyfish- for want of a better description... just tasted wet too!!

2 use approx 1/10 vinegar to water

3. check the date on your eggs, the albumen breaks down with age you want no older than 2 weeks old if you can.
