i am making doughnuts and want to make a glaze, recipe ask for powdered sugar and i don't have. also what temp. does sugar need to be cooked at?

Just put your granulated sugar in a good blender or food processor with a little cornstarch and you can make your own powdered sugar. Add some lemon juice and water and you'll have a great glaze. Melting sugar (using a candy thermometer you can achieve different stages at different temperatures which dictate how the sugar will act when it cools) will not just make a syrup that will be way too hard and/or sticky to use for your recipe.

You are not going to get the same type of glaze from granulated sugar vrs powdered sugar..You can melt granulated sugar on the stove on low with a little water and it will turn golden brown and with vanilla added turn into a syrup..but it will not be a glaze but a syrup.

I have put granulated sugar in a frying pan as a child to make hard candy. It melts but gets very hard very fast.

the sugar will melt into a liquid form. so the answer is yes, just that the liquid produced will be a thick syrup... continue and it will turn into caramel! wow~

you will be making a simple caramel syrup if you heat granulated sugar....
