I know they race about 100 miles each day for about a month. can they save their energy for the last day?

and besides wearing the winners shirt for the day before, what other daily accolades does the winner get

It is possible that the final winner of the Tour de France (yellow jersey) may not win a single stage at all. It is based on total time accumulated through all the stages.

The overall winner of the Tour de France has to have the least amount of time spent on the bike for the whole Tour.
The one who crosses the finish line first on the last day (always on the Champs d'Elysées in Paris) is just the winner of the stage.

The winner is the cyclist with fewest time travelled for all the laps that the tour have and not the one who crosses the finish line first on the last day. For every lap, a green jersey is awarded as the winner and a yellow jersey is awarded to the overall leader for every lap each day..

It is cumulative time over the entire race. This includes time bonuses (subtracted) and pack finished (whenre everyone gets the same time). The last day is just a stage win, and usually ceremonial.
Wearing the yellow jersey also give some respect in the peloton (pack). Your team will set the pace and keep competitors from attacking, people usually give you more room so you don't crash, etc.
