1) Tortillas - are an every day staple, just as bread is in North America...

2) Bean - come in all colors but in Honduras, the food usually included red or black...

3) Rice - Many "blue plate specials" will have rice on them...

4) Salad - is often served with your food in Honduras. Frequently, it will be a shredded cabbage, a few slices of carrots, and moistened with a light oil/vinegar (hint of sugar) dressing.

5) Meat (inland), Fish (North Coast or Bay Islands) - average Honduran can not afford these type of food luxuries. Salsas grace every good table and often spice up the food...

1) Tortillas Recipe-
- 1 cup of masa mix
- 1/2-3/4 cup of water

- Mix for 2 minutes or until you have a solid ball. [Add only a little at a time until the right consistency occurs. This is critical}.

- Divide into 8 pieces. [Moisten a kitchen towel and keep it over the dough during the entire time].

- Place one piece of the dough on your tortilla press between pieces of wax paper. Press firmly and peel the tortilla off the press.

- Toss the tortillas onto an ungreased iron griddle, turning just as they begin to burn.

- Keep tortillas warmed under a kitchen towel while others are cooking.

plato typico consists of fried platanos, rice and beans, white cheese (hard and sour) and tortillas. there is usually one of two "salsas" available: either pico de gallo (tomatoes and onions) or some kind of pickled beets with carrots, jalapenos and onions. usually plato typico comes with a grilled meat, but i don't know much about that because i'm vegetarian. pupusas are common in honduras, but originally come from el salvador i think. they are corn tortilla dough filled with something (queso, beans, chicken, sausage or a mixture of things), then fried and served with the pickled beets. there's also a sort of quesedilla that i can't remember the name of right now. it usually has refried beans, powdery white cheese and mantequilla (a sort of cross between sour cream and butter). there are little deep fried empanadas that usually have meat in them, or possibly potatoes. there's a dish that looks like a tostada, usually with chicken or meat and "salad", which is shredded cabbage. most things come with "salad". on the coast of course there is a lot of fish available.

finish with tres leches cake - yum!

i don't have recipes, but most of the food is simple (ie, fried platanos involves slicing plaintains and cooking them in oil). you might find recipes on the web.

green mangoes are common on the street, as well as other fruits that aren't common elsewhere.
