Happy Luck Fortune Cookies

Prepare fortunes by writing messages
on about 20 strips of paper.

TIPS:
-- Make only two or three cookies at a time, because the cookies become stiff very quickly and when cooled are too brittle to bend into their familiar shape.

-- To form into the crescent shape, have a thin-edged bowl or pan on hand, along with a muffin pan.

-- To handle the hot cookies, wear white, cotton gloves.

Preheat the oven to 300F.

INGREDIENTS:
8 oz . flour
2 tablespoons cornstarch
4 ounces sugar
1/2 teaspoons salt
2 egg whites
4 ounces vegetable oil
1 teaspoon water
2 teaspoons vanilla extract

DIRECTIONS

In a large bowl, Sift together the flour, cornstarch, sugar, and salt. Stir in the oil, egg whites, water, and vanilla. On a well-greased baking sheet, roll a very thin 4-inch circle of dough and bake for 15 minutes or until golden.

Remove one cookie at a time from the oven with a wide spatula; working quickly follow these four steps:

1. Flip cookie onto cotton gloved hand.
2. Hold fortune in center of pliable cookie while folding cookie in half.
3. Grasp ends of cookie and draw gently down over edge of muffin pan to crease at center of cookie.
4. Fit cookie in muffin pan (points down) to hold shape as it cools. If cookie hardens too quickly, put it back in the oven for about 1 minute.


Store in airtight container.

These cookies are good for parties and personalized gifts.

WHAT YOU’LL NEED

5 tablespoons unsalted butter
4 egg whites
1 cup superfine sugar
1 cup sifted all-purpose flour
1 pinch salt
3 tablespoons heavy whipping cream
1 teaspoon almond extract (in a pinch, vanilla extract will do)
Silpat or parchment paper
Muffin tin

step 1 Prep Work

Write or type fortunes onto paper and then cut them into thin strips. Set these aside.
Preheat oven to 400 degrees.
Cover a baking sheet with a Silpat (a silicone-coated nonstick sheet). Parchment paper will also work, but I dare you to try the Silpat and not rave about how it’s improved your baking life.

step 2 Prepare the Batter

Melt butter in a small saucepan over low heat. Or microwave it —no big whoop.
Use an electric mixer to combine egg whites and sugar; beat on medium speed until you have a frothy mixture.
Fold in the flour and salt; mix again.
Add butter, heavy cream, and almond extract; beat until mixed.

step 3 Bake

Pour one tablespoon batter onto the baking surface and spread it into a thin four-inch circle.
Repeat up to three times for a total of four cookies.
Shove those puppies into the oven and bake until just the edges turn golden brown, about eight to 10 minutes.

step 4 The Fun Part- Folding!

When the cookies are finished baking, it’s time to shape them and add the fortunes. You’ll only have about ten seconds before each cookie hardens, so get ready to work fast!
Put on rubber gloves if you have them to protect your paws from the hot cookies.
Slide a spatula under a cookie, lift it up, place a fortune in the middle, and fold the cookie in half.
Plop it into the muffin tin to hold its shape. Repeat the process with the other cookies.

step 5 Variations

Add a bit of cocoa powder to the batter to make chocolate-flavored cookies.

Before pouring the cookies onto the cookie sheet, set aside some batter and add a drop of food coloring. Pour the cookie, add a bit and then swirl the colored batter around the non-colored batter. You can make little shapes or go for a tie-dyed look.

4. Add the flour into the egg white mixture and stir until you have a smooth batter. The batter should not be runny, but should drop easily off a wooden spoon.

5. Place level tablespoons of batter onto the cookie sheet, spacing them at least 3 inches apart. Gently tilt the baking sheet back and forth and from side to side so that each tablespoon of batter forms into a circle 4 inches in diameter.

6. Bake until the outer 1/2-inch of each cookie turns golden brown and they are easy to remove from the baking sheet with a spatula (14 - 15 minutes).

7. Working quickly, remove the cookie with a spatula and flip it over in your hand. Place a fortune in the middle of a cookie. To form the fortune cookie shape, fold the cookie in half, then gently pull the edges downward over the rim of a glass, wooden spoon or the edge of a muffin tin. Place the finished cookie in the cup of the muffin tin so that it keeps its shape. Continue with the rest of the cookies.

Each serving includes (based on a total yield of 9 cookies):

FORTUNE COOKIE RECIPE


100g plain flour.
1/4 teaspoon of salt.
2 tablespoons of cornflour.
6 tablespoons of sugar.
7 tablespoons of olive oil.
2 egg whites.
3 tablespoons of water.
6 Fortune Cookie messages.

Preheat the oven to 350 degrees F.

Stir together the flour, salt, cornflour and sugar. Then add the olive oil and egg whites and mix together until smooth. Pour in the water and continue to mix.

On a greased cookie sheet, pour 1 tablespoon of batter for each cookie, using the back of the tablespoon, spread out the batter until it is very thin which will be about 3 inches in diameter.

The ingredients should be sufficient for about 6 cookies.

Bake for about 5 minutes or until the edges are lightly brown.

Quickly place your fortune messages in the centre of each cookie and fold the cookie in half enclosing your message, to form a semi-circle.

Hold the rounded edges of semi-circle between thumb and forefinger. Place forefinger of other hand at centre of folded edge and push in, making sure that the solid sides of the cookie puff out.

Place each cookie in a small size baking tin open edges up, until cookie is set. Store in an airtight container.
