I don't believe they know; however, it is amazing how they can come up with recipes so quickly and have all the ingredients to use in front of them. I watch the American Iron Chef a few times a month and I like it but I think that the original Iron Chef was excellent!

no they don't....it's called a "Blind Basket" competition...
what they propably do it have an idea of what they will do if the ingredient is whitefish......red meat...poultry...
a fruit.....etc......
with the calliber of chefs on Iron Chef...if they knew what was going to be featured.....they would be putting together 12-14 courses versus....3-6 courses..

no. leaves a little to the imagination. kind of like not knowing what the secret ingredient will be until it's announced. kind of fun. really like the show too
