Blueberry Tea Cake Recipe
2/3 cup sugar
1 1/2 cups cake flour, sifted
1/2 teaspoon cinnamon
2 teaspoons baking powder
3/4 teaspoon salt
1/3 cup milk
3 tablespoons butter, melted
1 teaspoon vanilla extract
1 cup fresh blueberries
2 tablespoons sugar
8 servings 1 blueberry tea cake Change size or US/metric
Change to: blueberry tea cake US Metric
35 minutes 10 mins prep
Preheat oven to 400 degrees, then grease a 1 1/2 quart shallow baking dish.
In a medium bowl with a wooden spoon, beat egg.
Gradually beat in 2/3 cup sugar; beat until combined.
Sift together flour, baking powder, cinnamon and salt.
Add to sugar mixture alternately with milk- Beat well after each addition.
Add butter and vanilla; beat thoroughly.
Fold in the blueberries.
Pour batter into prepared pan and sprinkle top with 2 tablespoons sugar.
Bake for 25 minutes or until top springs back when lightly touched.
Serve warm with butter.

Freeze them. Wash them, dry them, and pick out all the stems first. Blueberries freeze well and can be used the rest of the year for pancakes, sauces, smoothies, icecream, muffins.... whatever. You are so lucky, blueberries are great!

Freeze them, but wash them first, then let them drain and get dry. If you have too much water, it will freeze them in a lump, which you don't want. If you freeze them when they are dry, they'll freeze individually, and then it's really easy to pour them out of the bag or container they're in. When I make blueberry pancakes, I don't even bother to thaw them, I just scatter them onto the cooking pancake.

you should freeze some, just don't get them wet until you're ready to use them, it can turn them soggy. put them in zip lock bags and freeze. you can make pancakes, just add the blueberries right after you pour the batter, if you put them into it you can turn your batter purple, although still tasty, it's just not as attractive. except to kids. you can add them to cakes, use a whip cream topping and fresh fruit instead of frosting, in drinks, in cereal, pretty much anyway you can think of. my daughters love to just eat them plain.
