It is believed that the original potato chip recipe was created by Native American/African American chef George Crum, at the Moon Lake Lodge in Saratoga Springs, New York on August 24, 1853. He was fed up with a customer — by some accounts Cornelius Vanderbilt — who continued to send his fried potatoes back, because they were too thick and soggy. Crum decided to slice the potatoes so thin that they couldn't be eaten with a fork. Against Crum's expectation the guest was ecstatic about the new chips. They became a regular item on the lodge's menu under the name "Saratoga Chips". They soon became popular throughout New England. Eventually, potato chips spread beyond chef-cooked restaurant fare and began to be mass produced for home consumption; Dayton, Ohio-based Mike-sell's Potato Chip Company, founded in 1910, calls itself the "oldest potato chip company in the United States." In the summer of 1853, Native American George Crum was employed as a chef at an elegant resort in Saratoga Springs, New York. One dinner guest found Crum's French fries too thick for his liking and rejected the order. Crum decided to rile the guest by producing fries too thin and crisp to skewer with a fork. The plan backfired. The guest was ecstatic over the browned, paper-thin potatoes, and other diners began requesting Crum's potato chips

I know you could find this on the Food Network website www.foodtv.com.
It was one of the episodes of "THE SECRET LIFE OF..." show. It talked about the begining orgin of potato chips.
It started with a very picky customer, who ordered that the chef make him a thin sliced potato dish, but the customer kept sending the dish back to the chef b/c they weren't cut thin enough. So finally the chef got fed up and sliced the potatos extrememly thin, potato chip thin.
It turns out the customer liked the way the potatos were cut b/c when cooked they came out crunchy.
